Six dining establishments, poised to be the sky's gastronomy, will be born on the 31st and top 40th floors of Conrad Nagoya, offering an open view of the Nagoya cityscape. Italian restaurant "CASA OLIVA," Japanese restaurants "SŌRYŪ" (Sushi Kaiseki) and "SŌEN" (Teppan Kaiseki), rooftop bar "HOUSE OF MON," lobby lounge & bar "SUNDROP," and cafe & terrace "SONGBIRD" will deliver diverse dining experiences, each leveraging its unique character.
Regarding the commencement of restaurant reservations, Executive Chef Koji Sato stated:
"By engaging with the ingredients nurtured by the rich climate of Chubu and Aichi, and maximizing their individual characteristics, we will create a culinary experience that can only be savored at Conrad Nagoya. To meet the high expectations placed upon this special location, The Landmark Nagoya Sakae, we will not be bound by existing perceptions of Nagoya, but will instead shed light on its untold charms and express the potential of this land through cuisine. Conrad Nagoya Executive Chef Koji Sato Koji Sato began his culinary career in 1999 at the New Kobe Oriental Hotel (now ANA Crowne Plaza Hotel Kobe). He then honed his skills at Michelin-starred restaurants in Provence and Lyon, France, before joining "Hamanako Auberge Quatre Saisons." After being appointed Executive Chef, he was selected in the top 10 of the national auberge rankings by the Nikkei newspaper. From 2010, he served as the chef at the official residence of the Consulate General of Japan in Sydney, Australia, hosting VIPs from Japan and Australia as a culinary diplomat. In December 2013, he joined Hilton Nagoya as a section chef in the banquet kitchen. In February 2019, he was appointed Executive Chef, overseeing Hilton Nagoya's culinary offerings with his creative approach to drawing out the natural flavors of ingredients and his vibrant presentations, honed through global experience. In February 2026, he joined Conrad Nagoya, where, as Executive Chef of six restaurants, he leads menu development, leveraging his extensive experience, exceptional skills, and deep knowledge. He oversees operational management, including kitchen quality control, skill establishment, food concept development, staff training, and improvement of management standards, and is in charge of the culinary departments for six dining establishments and seven banquet and meeting rooms.
