At the resort's main dining restaurant, "Sensei by Nobu," a variety of rich and flavorful dishes made with fresh local ingredients are available, based on Nobu's unique delicate Japanese essence. Now, with the addition of new wellness desserts, guests can enjoy an even more fulfilling gourmet experience. "Wellness is the foundation of everything, but that doesn't mean you have to give up the pleasure of sweets. What we aim for is to create natural and satisfying desserts that make you hardly notice that ingredients have been replaced for dietary restrictions or allergy considerations," says Christian Macke, the resort's Assistant Pastry Chef. Made with monk fruit-derived sweeteners and coconut milk instead of refined sugar, gluten, and dairy products, these desserts achieve a rich, deep flavor while being light.

**Honeydew Yogurt Espuma** A gently sweet dessert featuring a pandan coconut sauce base, honeydew melon spheres with condensed umami flavor through vacuum-sealed low-temperature cooking, and vanilla-flavored semifreddo made with honey from Lanai's apiary. Layered with smooth Greek yogurt espuma and honeydew granita, and topped with salty, aromatic rice tuiles, it offers a light texture and a beautiful contrast of sweetness and saltiness. Made with monk fruit sweetener, it is gluten-free yet delivers a satisfying taste.

**Kiwi Coconut Verrine** A beautifully crafted creation served in a coupe glass. Enjoy a variety of textures and refreshing flavors in each layer, composed of kiwi compote, kiwi jelly, coconut lime panna cotta, kiwi sorbet, and coconut foam. It achieves a luxurious taste without dairy and gluten, making dietary restrictions feel nonexistent.

**Matcha Monk Fruit Basque Cheesecake** A gluten-free Basque cheesecake where the subtle bitterness of matcha harmonizes with the gentle sweetness of monk fruit. After high school, he moved to Los Angeles to pursue his passion for cooking. After gaining experience in numerous renowned restaurants, he joined Four Seasons in 2015. In 2019, he was promoted to lead the pastry team at Four Seasons Hotel Los Angeles at Beverly Hills. He now brings his innovation and precision to Sensei Lanai.
