Sapporo's Elm Garden (operated by Masuda Planning Co., Ltd.) will host its first preview event, 'Seiseidodo DINING EXPERIENCE VOL.1', on Thursday, June 25, 2026, to introduce the philosophy behind its new gastronomy brand, 'Seiseidodo', scheduled to open in early summer 2027.
For this first installment, the restaurant will welcome Chef Takashi Taniguchi, master of the renowned Kyoto sushi house 'Sushi Saeki'. The event will feature a one-day-only collaboration course that combines dishes created by Elm Garden's Executive Chef Masakazu Kobayashi, inspired by Hokkaido's ingredients and terroir, with Chef Taniguchi's nigiri sushi, rooted in traditional techniques.
Background: 'Kyoto Techniques' refined by tradition x 'Hokkaido Terroir' that continues to evolve. 'Seiseidodo', which will launch within the Elm Garden facility in 2027, aims to go beyond simple local sourcing by engaging with Hokkaido's vast nature and producers to express the land's memories and culture through cuisine.
This event represents a crossing point between Kyoto's culture, polished through a long history of traditional craft, and Hokkaido's unique natural environment. Two chefs will share their philosophies to present new possibilities in Japanese culinary culture.
Highlights of 'Seiseidodo DINING EXPERIENCE VOL.1': 1. Preview of the 'Seiseidodo' philosophy opening in 2027: An opportunity to experience the worldview drawn by Masakazu Kobayashi ahead of the official launch. 2.
