Tsukemen/Ramen Yuimaru, a ramen shop in Inuyama City, Aichi Prefecture, will begin offering its newly developed "Ultra-Extra-Thick Mochi Noodles" made with mochi wheat starting April 16, 2026.

This product transcends the traditional concept of "koshi" (firmness/chew) in ramen, realizing an entirely new noodle experience defined by a "bouncy texture."

With every slurp, you'll experience elasticity just like mochi. The texture that bounces back with every bite sets it apart from any ramen you've had before.

"Why do these noodles 'bounce'?" While standard wheat contains both "amylose" and "amylopectin," the "mochi wheat" used here is a special variety composed almost 100% of amylopectin, the component responsible for stickiness.

This characteristic creates properties such as "strong stickiness, stretchable elasticity, and resistance to hardening even when cooled."

As a result, we have achieved a texture that feels less like "chewing" and more like "bouncing back."
