Soisnie Co., Ltd. (CEO: Daisuke Takubo) announces the opening of 'DOLCE TACUBO GINZA,' the third store of its patisserie brand 'DOLCE TACUBO,' in Ginza on Thursday, June 18, 2026. The Ginza store will feature eight signature gelato flavors available year-round, along with an expanded lineup of baked goods. Additionally, the popular soft serve will be relaunched across all stores under the new name 'Dorutaku Soft.'

'DOLCE TACUBO' is a patisserie launched in 2021 by 'TACUBO,' a highly sought-after Italian restaurant in Daikanyama known for its reservation-only dining. Responding to customer requests to take home the desserts—such as financiers and gelato—served at the end of the restaurant's tasting menu, the brand began as a takeaway-only concept. In 2023, 'DOLCE TACUBO Caffe,' renowned for its explosively popular soft serve, opened at Toranomon Hills Station Tower. The upcoming Ginza store marks the brand’s third location.

Guided by the concept of 'bringing the essence of the restaurant directly into desserts,' DOLCE TACUBO infuses each creation with the thoughtful philosophy and meticulous craftsmanship of TACUBO. Familiar classic sweets are elevated into uniquely refined experiences. The brand emphasizes drawing out the inherent charm of ingredients through recipes and techniques perfectly suited to each individual item.

Expansion of Ice Desserts

In addition to its classic baked goods, DOLCE TACUBO will expand its ice dessert offerings, including gelato and soft serve. Gelato will also be available for online sales in the near future.

Gelato

Gelato will be a signature offering at the Ginza store. While the Daikanyama location previously offered one rotating flavor, the Ginza store will feature eight flavors available at all times. These combinations reflect the restaurant’s Michelin-starred culinary philosophy, having earned seven consecutive Michelin stars. For fruit-based gelato, only premium fresh fruits sourced from carefully selected producers across Japan—established through years of restaurant operations—will be used to ensure exceptional quality.

FLAVOR

Pistachio: Features two types of pistachio—aromatic roasted pistachio and fresh pistachio paste. Topped with roasted pistachios and Maldon salt.

Plum: Made with fresh plums pureed with the skin, highlighting the natural tartness of the fruit.

Pineapple Basil: A refreshing summer flavor combining fresh pineapple’s sweetness and acidity with the aromatic freshness of basil.

Amarena: An Italian-style combination of vanilla base with egg yolk, mixed with syrup-soaked cherries and cookie pieces.

Yogurt Mango Passion: A tropical gelato with mango and passion fruit sauce blended into a yogurt base.

Marsala Raisin: Milk gelato blended with raisins soaked in Marsala wine.

Kawachi Bankan: Generously made with juice from Kawachi Bankan oranges grown on Iwakijima Island, offering a refreshing balance of acidity and bitterness.

Sage Stracciatella: A milk-based gelato infused with the aromatic scent of sage, accented with Minimal’s bitter chocolate.

DOLCE TACUBO Soft Serve

Milk: ¥1,000 / Matcha: ¥1,200 / Mix: ¥1,300 (tax included)

Crafted using an Italian soft serve machine (Carpigiani), this soft serve delivers a fluffy, smooth texture and a clean, crisp sweetness—an entirely new sensory experience. The recipe has been refined through multiple iterations to achieve the ideal air content and fluffiness.

With this opening, the classic milk flavor has been upgraded. By switching to the premium 'Crème Soisnie' cream, the brand maintains the clean aftertaste meticulously developed by CEO Takubo (who dislikes milk), while enhancing the richness of flavor. Additionally, matcha flavor makes its debut. While preserving the authentic matcha aroma, the flavor is carefully balanced to remain enjoyable until the last bite.

New Baked Goods Lineup

In conjunction with the Ginza store opening, the lineup of financiers and custards will be expanded.

Previously seasonal items—chocolate financier and hazelnut financier—are now permanent additions, bringing the total to three consistently available financiers. A new 'white custard' will also debut, available individually or as a set with the original. Other items, such as Baumkuchen, are under development and will be introduced gradually.

Chocolate (¥600): A moist, rich financier made with Minimal chocolate, delivering intense cocoa aroma and a pleasant bitterness. Sweetened with honey.

Hazelnut (¥600): A luxurious financier made with generous amounts of hazelnut powder and paste, offering a full expression of hazelnut flavor. Topped with roasted hazelnuts.

Custard (White):

A smooth custard made with Crème Soisnie, offering a texture between jelly and traditional custard. Rich in milk flavor yet finishes cleanly.

Made with fresh passion fruit from Okinawa, adding bright acidity and fragrance. The accompanying fruit will vary seasonally in the future.
