Soy Inc. (Headquarters: Numazu, Shizuoka; CEO: Tetsuji Ishigaki), which aims to build a circular economy through fermentation technology, has collaborated with 'Katsuragi Coffee,' located within Izu Panorama Park (Izu no Kuni, Shizuoka; CEO/GM: Norinori Sugimoto), operated by Dainichi Co., Ltd. Ahead of 'Zero Waste Day' on May 30, the company has utilized its patented technology to ferment and recycle coffee grounds from the café into food ingredients without the need for drying. These will be commercialized as 'Koji Café Apple Pound Cake' and 'Koji Café Brownie,' with sales starting on June 20, 2026, at the Katsuragi Coffee store.
This initiative is a new 'tourism-destination-complete' sustainable tourism model that regenerates byproducts generated at tourism sites into special experiences to be savored on the spot.
In this initiative originating in Shizuoka, coffee extraction byproducts that have not been fully utilized in the past are reborn as new café sweets to be enjoyed amidst the superb views of Izu. Both companies are winners of the Shizuoka Prefecture SDGs Business Award, making this a symbolic model of circular business implementation within the prefecture.
