Tokachi Tsukada Summer 2026 Recommendations

Grilled Shintoku Chicken ~Tokachi Spice~ (2,079 yen)

A collaboration menu with "Tabisuru Spice" that started in April 2026. The final destination of "Shintoku Chicken Traveling the World" is, of course, the taste of Hokkaido and Tokachi.

Grilled Shintoku Chicken ~Tokachi Spice~

Shintoku Chicken, the signature ingredient of "Tokachi Tsukada."

This time, we use "Tokachi Spice" from "Tabisuru Spice," which sells original spices in Tokachi. Shintoku Chicken is marinated in a spice blend of 10 herbs and spices, mainly made from Tokachi-produced vegetable powder, and then grilled to a fragrant finish.

This is the representative flavor of this "Tokachi Fair."

Bito-san's 2-Year Aged Danshaku Potato Butter (748 yen)

Bito-san's Danshaku potatoes, slowly aged for two years in a snow-aged storage.

The aged potatoes have a moist texture and condensed sweetness, which are enhanced by pairing them with fermented butter from Jersey cows at Kato Farm, creating a rich and luxurious taste.

This is a premium potato butter that allows you to savor the ingredients, packed with the producer's dedication.

Hokkaido Corn Kakiage (682 yen)

Hokkaido Corn Kakiage

Corn, along with potatoes, symbolizes the taste of Hokkaido summer.

We use raw corn to bring out its crisp texture and fresh sweetness, creating a kakiage (deep-fried mixed vegetable fritter) with a delightful crispy and juicy texture.

Served with salt from Okhotsk, Hokkaido, to further enhance its sweetness.

Tokachi Mashroom Carpaccio (638 yen)

Brand mushrooms from the Tokachi region of Hokkaido, "Tokachi Mashroom," are sliced raw and served as carpaccio.

Topped generously with honey mustard sauce and "Snow Angel," a Tokachi-pride salted raclette cheese, this dish allows you to savor the umami and aroma of Tokachi Mashroom.

Shimizu Town, Tokachi Beef Toro Don (638 yen)

Shimizu Town, Tokachi Beef Toro Don

Uses "Gyutoro" made from healthy cattle raised freely in the vast nature of Bone Free Farm in Shimizu Town, Tokachi.

When the melt-in-your-mouth beef toro is combined with grated yam and soy sauce dressing over hot rice, the richness of the fat and the texture of the lean meat are further enhanced.

A luxurious taste filled with the farm's passion.

*The "Gyutoro Flake" used in this menu is "non-heated meat product."

Corn Monaka Ice Cream (528 yen)

A monaka ice cream sandwich made with Hokkaido corn, grilled fragrantly with soy sauce, layered with Hokkaido milk ice cream, and sandwiched between crispy monaka wafers.

This visually appealing ice cream, which makes you want to take a photo, combines the gentle sweetness and aroma of corn with rich milk ice cream for an irresistible sweet and savory taste.
