To widely promote the charm of the food culture unique to this region, Saga City Morodomi in Food Association hosted the "Etsu Fes" on May 31st. Furthermore, on June 1st and 2nd, an "Etsu Cooking Class" was held for third-year students of Morodomi Junior High School. The "Etsu" is a rare fish found only in the inner bays of the Ariake Sea. Fishing is permitted only for a short period each year, from May 1st to July 20th. This period before spawning is when the fish is fattiest and at its most delicious.

It has long been a familiar ingredient in the Morodomi region and is a staple that supports the local food culture. It is loved by many as a special fish that can only be tasted in this limited area.

"Etsu Fes" to Fully Enjoy Seasonal "Etsu"

The "Etsu Fes," held at Hashi no Eki Doronpa on May 31st, attracted many visitors.

At the venue, various dishes made with seasonal "Etsu" were sold, including sashimi, salt-grilled, nanbanzuke (sweet and sour fried fish), and sushi. Visitors enjoyed the unique flavors of the season while experiencing the proud food culture of Morodomi.

Demonstrations of bone-cutting by artisans, free servings of nori soup, and free distribution of Saga nori also took place, keeping the venue lively throughout the day. Many people also participated in the Chikugogawa River Lock Gate Stamp Rally and pleasure boat cruising, making it a day to fully enjoy the charms of Morodomi.

"Etsu Cooking Class" for Students to Learn Local Flavors

On June 1st and 2nd, an "Etsu Cooking Class" was held for third-year students of Morodomi Junior High School.

Members of the Saga City Morodomi in Food Association served as instructors. After introducing the characteristics of "Etsu" and its connection to the region, the students tried their hand at cooking. While preparing the fish and performing bone-cutting, they deepened their understanding of local ingredients, which they rarely have the chance to handle.
