### Background of Introduction

The melted snow from the Northern Alps emerges as clear spring water in Azumino City, Nagano Prefecture, after 20-30 years. At nana's green tea, the "stem wasabi" offered on the regular menu uses wasabi from Fujiya Wasabi Farm, which is grown with Azumino's spring water.
This natural spring water is rich in oxygen and flows continuously 365 days a year with a constant temperature, creating a stable growing environment suitable for fish farming.
Fujiya Wasabi Farm also cultivates salmon using this spring water.
"Azumino Salmon" raised in this environment is characterized by its elegant fat without any unpleasant odor and a soft texture.
We were impressed by its elegant taste and the fact that it is a domestic ingredient consistent with nana's green tea's concept, leading us to adopt it for the first time as a restaurant chain.
