The film captures moments that embrace culture and sensibility, expressing the hotel's concept: "Tradition Served Quietly."

"HOTEL FORK & KNIFE Miyajima," which opened on March 28, 2026, in Miyajimaguchi, Hiroshima, offers a time to quietly engage with the local culture and history, centered around "food" and "art."
Food – The hotel's local gastronomy
Conceived as a "place to quietly understand" the land of Hiroshima and Miyajima, the hotel's "food" experience is a major attraction. Hiroshima is known as a "microcosm of Japan." Rain that falls on the mountains becomes rivers, carrying forest nutrients and minerals as they flow into the Seto Inland Sea. In this rich land blessed with the bounty of mountains and sea, ingredients are brought to life through the primal cooking method of "wood fire," drawing out their full potential and delivering a sensory dining experience.

The cuisine at HOTEL FORK & KNIFE Miyajima is an 11-course dinner that reflects Hiroshima's climate, from mountains to sea. Each dish is inspired by the voices of producers captivated by Hiroshima's ingredients, carrying stories as representatives of the region. Traditional Hiroshima dishes and Japanese cooking methods are reinterpreted for the modern era, with the "wood fire" technique naturally drawing out the essence of the ingredients for an unparalleled culinary experience.

"Oysters, Fermented Lemon, Pine" A dish featuring oysters, a symbol of the Seto Inland Sea, paired with yogurt pudding from local dairy company Chichiyasu. The yogurt's acidity enhances the oysters' mellow sweetness, with the refreshing flavor of fermented lemon adding an accent.
"Local Chicken, Lemon Pepper, Kuro-moji" Wood-fired grilled "Higashi Hiroshima Koi Jidori" chicken, raised for several times the usual number of days. The balance between the crispy skin and the moist, tender meat is exquisite. Enjoy the deep flavor, complemented by salt infused with kuro-moji (a medicinal herb) and lemon pepper.
"Conger Eel Rice"
Miyajima's signature conger eel rice, reimagined in a modern style. Cooked with fragrant roasted green tea, it is gently paired with a sweet sauce made from conger eel bones. The freshly cooked rice, milled and cooked in a clay pot for each order, is also a highlight.
Art – Spatial design by Fumihiko Sano and artworks themed around "Keihaku" (Mooring)
The hotel's design was handled by architect and artist Fumihiko Sano. After apprenticing as a carpenter at the renowned traditional Japanese construction company "Nakamura Gaiji Kōmuten," where he learned construction methods, materials, and measurements through hands-on experience, he became independent in 2011. In 2016, he traveled to 16 countries as a Japanese government overseas cultural envoy and has received numerous domestic and international awards, including EDIDA 2014 ELLE DECO Young Japanese Design Talent and IF DESIGN AWARD 2020. Inspired by Miyajima's lantern processions, lighting fixtures produced within the prefecture cast a soft glow. The 34 rooms, in 10 different types, incorporate traditional Japanese design elements such as raised tatami areas and shoji screens, combined with modern materials and art.

Breathing life into these spaces are a collection of artworks curated under the concept of "Keihaku" (繋泊), meaning to moor or anchor a ship. This term embodies the desire to connect Itsukushima Shrine and Miyajimaguchi, people to people, and new experiences. Works by emerging Japanese artists, expressing new forms of traditional Japanese arts and crafts such as calligraphy, ink painting, Japanese painting, and ceramics, are scattered throughout the hotel. The aim is to create a space for new connections between artists and writers active in Japan and hotel guests. The curation was handled by Landscape Products Co., Ltd.

Daichiro Shinjo / Calligraphy - 2F Lobby
Born in Miyakojima, Okinawa. With a grandfather who was both a Zen monk and a folklorist, he pursues contemporary calligraphy unbound by form, rooted in Zen and Okinawan spiritual culture. The concept of this work is "Ma" (間), aiming to evoke the tension and emotional shifts before crossing to the sacred island of Itsukushima, and the interval where the body and spirit become synchronized.
Yuta Niwa / Japanese Painting - 2F Lobby
Born in Kanagawa in 1993. After completing his graduate studies at Kyoto University of Art and Design, he studied abroad in Beijing. He currently lives and works at Kōmyō-in, a sub-temple of Tōfuku-ji. His work, using the context and techniques of Japanese painting, focuses on unseen calamities and human prayers resisting them. "Sōkai Shuketsu-zu" (図), exhibited in the 2F lobby, depicts the "Ō-hanzaki" (大鯢), a symbol of the turbulent nature lurking in Hiroshima, and the "vermilion wedge" that restrains it. The vertical vermilion line piercing the canvas symbolizes the torii gate of Itsukushima, envisioned as a "wedge" descending from heaven and driven into the sea.
Hiroki Miura / Ceramics - 2F Lobby & Guest Rooms
Born in Hiroshima. After graduating from Arita Pottery Technical College, he became independent in 2020. He has a studio in Takeo City, Saga Prefecture, and creates richly expressive ceramic works using a variety of kilns, from traditional anagama kilns to modern ones. Large vases, inspired by the designs of ceramic window paintings, are installed in the 2F lobby and the premium suite "Sui."
