Hashizume Seimen Co., Ltd. (Headquarters: Shinagawa-ku, Tokyo, CEO: Toshiyuki Hashizume), the company that developed Japan's first 'Hisuimen' (jade noodles) and creates noodles for many famous restaurants, will open 'CRAFT NOODLES Hashizume' in Hiroo, Tokyo, starting Monday, April 6th.

All noodles are supervised by Noodle Artist® Toshiyuki Hashizume (our CEO), who has crafted noodles for numerous renowned establishments. The 'CRAFT' in the store name 'CRAFT NOODLES' means 'craftsmanship' and 'handwork' in English. Under the concept of 'offering the best noodles,' customers can choose their favorite noodles and enjoy combining them with different soups. Furthermore, the noodle dishes designed to maximize the deliciousness of the noodles are supervised by Hideaki Yamada, the executive chef of the Michelin-starred restaurant Hashizume.

We offer noodles made from carefully selected Japanese ingredients and wheat (including some imported ingredients), such as the spring-exclusive 'Sakura leaves', 'Matcha', 'Burdock root', 'Yuzu', 'Aonori (green laver)', 'Ginger', and 'Sakura shrimp'. Please enjoy not only the taste but also the brightly colored and beautiful noodles.

Faintly fragrant Sakura noodles kneaded with sakura leaves from Izu, and vibrant green, rich Matcha noodles kneaded with matcha from Mie Prefecture. Please enjoy these two seasonal colored noodles with a cold dipping sauce based on Japanese dashi, available in either salt or soy sauce flavors.

The centerpiece menu of spring is the 'Sakura Noodles', kneaded with sakura leaves from Izu. We carefully select the leaves of the Oshima cherry from Matsuzaki-cho on the Izu Peninsula, which are also used for sakuramochi. By kneading salted sakura leaves into wheat flour with our unique blend, we have locked in the distinctive fragrance of sakura (coumarin). The scent of sakura that spreads the moment it is boiled is the ultimate form of spring noodles, reached through Hashizume Seimen's years of noodle-making technology.
