Miyama Tofu Store, operated by Hidakara Co., Ltd., has launched an improved version of its 'Okara Chocolate Cake' on May 1, 2026. The cake utilizes okara, a byproduct of tofu manufacturing that often goes to waste, with only 1% of the 660,000 tons produced annually in Japan being eaten. Co-developed with Sachi Design Studio, the new recipe uses rice flour and a small amount of adzuki beans to solve previous issues of dryness and crumbling, offering a better texture without using honey, wheat, or dairy. It is available online for 3,500 yen.
