Kinotake Co., Ltd., which operates ryokans and restaurants in Hakone, Kanagawa, will open 'Kinonodashi Sho' on June 5, 2026, on the first floor of 'Hotel Zarakukan,' a 6-minute walk from Hakone-Yumoto Station. The restaurant specializes in dishes that maximize the flavor of traditional Japanese 'dashi.' Addressing the lack of late-night dining options in the Hakone-Yumoto area, the restaurant will stay open until 10 PM, providing a relaxing space for travelers to enjoy their evenings. The core of the menu is 'Kinonodashi,' made from Hakone's spring water and carefully selected bonito flakes. The lunch menu features 'Dashi Ochazuke,' while the dinner menu offers 'Hakone Oden' and local specialties from Odawara. The oden includes local ingredients such as mountain yam pouches, raw wheat gluten, and Odawara fish cakes.
