This is our brand concept. We aim to reintroduce the essence of authentic chukasoba to the Kansai region and operate a store that will be loved for generations.

The Origin of Chukasoba Tsutaya

‘Sapporo Ramen Dosanko’ opened in Ryogoku, Sumida Ward, Tokyo in 1967. However, its predecessor was a local Chinese eatery called ‘Gyozakeiten Tsutaya.’ This shop was beloved by locals for its traditional chukasoba and gyoza. Inheriting the DNA of that original chukasoba, we offer not only nostalgic, simple Showa-era chukasoba but also Neo-Classic Chukasoba with house-made bouncy back fat and aromatic katsuobushi oil to meet diverse customer preferences. While ramen has diversified into many genres, we are now opening a new store in Sakai River, Osaka, dedicated to serving the quintessential, original ‘Chukasoba’.

Features of Chukasoba Tsutaya

Soup

The clear pork broth is carefully simmered from pork blocks without emulsification, resulting in a deliciously savory, never-tiring flavor that you’ll want to drink to the last drop. Premium hot lard forms a film over the soup, keeping it piping hot until the end. We use a blended tare sauce made from carefully selected soy sauce and salt tare.

Char siu

We offer char siu in three portion sizes. The standard size is found in items with ‘Tsutaya’ in the name. We also offer a generous-size chashu ramen and a trial-size option starting at 790 yen. All char siu is prepared fresh daily in-store. It’s so delicious you’ll want to put it on rice.

Back Fat: Neo-Classic Chukasoba No. 1

Our house-made back fat is crafted to retain a slightly bouncy texture. For those who find regular chukasoba a bit light, we recommend the back fat version—a bowl filled with indulgent satisfaction.

Katsuobushi: Neo-Classic Chukasoba No. 2

We also prepare katsuobushi oil in-house. Premium katsuobushi is slowly infused into oil over time, transferring rich umami and aroma. We reduce the usual amount of lard and finish the soup with katsuobushi oil, creating an addictive bowl with a distinctive fishy fragrance.

Tsuke-Chuka

In summer, you might want to avoid hot ramen with a layer of hot lard—but still crave slurping noodles! For such moments, we offer Tsuke-Chuka: cold, smooth noodles dipped into a hot soup. With two servings of noodles, it’s guaranteed to satisfy.

Customization

We provide ‘pepper,’ ‘ichimi chili,’ ‘karashi miso,’ ‘garlic,’ ‘ginger,’ and ‘pickles’ on the table. Our chukasoba naturally makes you crave rice. Discover your own unique combinations for flavor changes or as a rice side dish.
