At the main dining venue "Sky Restaurant Sunset" on the hotel's top floor, the executive chef has prepared a menu that infuses each dish with profound flavor, drawing on years of experience and skill. When the hotel opened in 1986, the Maihama area was still developing, but it has since grown into one of Japan's leading resort areas. Please enjoy your meal while reflecting on the changing times.

**Amuse-Bouche** Snow Crab Cream Croquette with a small Basque-style Piperade Enjoy the two flavors of savory snow crab and rich stewed vegetables in one bite.
**Hors d'œuvre** Summer Vegetable Étuvée with Smoked Kuruma Prawn and Grilled Scallops, Vegetable Broth Foam and Caviar The summer vegetables are prepared "étuvée" style (steam-cooked with a little water and olive oil) to lock in their flavor. The prawn and scallops are cooked differently to create a broader taste profile, while the light foam of vegetable broth and the salty accent of caviar add a delicate touch.
**Soup** Clear Tomato Jelly with Tomato Espuma and Basil Infusion A transparent jelly made only from the essence of tomatoes, topped with a fluffy tomato espuma. The refreshing aroma of basil brings a sense of coolness.
**Fish Dish** Conger Eel Meunière and Pan-fried Foie Gras with Five-Grain Risotto and Braised Daikon, Périgueux Sauce A dish combining crispy-on-the-outside, fluffy-on-the-inside conger eel with rich foie gras. **Meat Dish** Wagyu Sirloin Roast with Sudachi Zest and Mignonette / Red Wine Braised Beef Cheek in a Vol-au-Vent with Roasted Romaine Lettuce Enjoy beef prepared in two contrasting styles. The sirloin is roasted to be moist and flavorful, lightly seasoned with sudachi zest and coarsely ground pepper. The beef cheek is slowly braised in red wine, with its deep richness enclosed in a crispy puff pastry.
**Dessert** Mango Mousse with Passion Fruit Sorbet, topped with White Chocolate A rich mango mousse is paired with a refreshing, tangy passion fruit sorbet. A garnish of white chocolate provides a gentle sweetness that beautifully completes the tropical finish.
