The annual summer tradition at Sharyo returns with its second installment!
Introducing the brand-new "Shirasu Oroshi Hiyakake," a refreshing addition to the beloved cold noodle series.
The popular way to finish—topping the remaining soup and ingredients over rice to create "Hiyakake Chazuke"—continues to receive rave reviews!
Sharyo, operated by Matsufuji Foods Co., Ltd., will launch two completely new summer limited-time offerings—"Shirasu Oroshi Hiyakake" and "Oni Oroshi Hiyakake"—as the second wave of its seasonal "Hiyakake" menu. Starting Wednesday, July 1, 2026, these items will be available chainwide, excluding select locations. Additionally, in response to overwhelming customer demand, the current fan-favorite "Myoga Hiyakake" will continue to be offered alongside the new releases.
A Refreshing New Addition to the Beloved Salty-Delicious "Hiyakake"!
"Hiyakake" has become a summer staple at Sharyo—a perfect dish for hot weather, featuring thick, straight noodles tightly chilled in cold water, served in a rich, intensely flavorful, ice-cold broth crafted to maximize the umami of seafood dashi. The bold, satisfying saltiness delivers a refreshing punch ideal for high temperatures, making Sharyo's signature "salty-delicious" taste something customers eagerly anticipate each year.
This second wave, launching in July to coincide with peak summer, introduces two exciting new variations, each spotlighting toppings that capture the essence of a Japanese summer through all five senses.
New and Continuing Menu Lineup
1 [Brand New] Shirasu Oroshi Hiyakake
A luxurious bowl featuring plump domestic shirasu (whitebait) and a generous heap of coarsely grated, juicy daikon radish piled high over the chilled broth. The delicate ocean aroma and natural saltiness of the shirasu, combined with the crisp, refreshing coolness of the daikon, blend perfectly with Sharyo’s rich seafood dashi. This is our most confident summer creation yet, delivering refreshment with every bite.
2 [Simultaneous Launch] Oni Oroshi Hiyakake
Topped boldly with "oni oroshi"—coarsely grated daikon radish. The oni oroshi absorbs the deep umami of the broth, creating a unique texture and a refreshing kick when slurped together with the noodles. This simple yet bold dish highlights the natural sweetness and spicy bite of fresh daikon, resulting in an appetite-awakening flavor experience.
3 [Due to Popular Demand, Sales Extended] Myoga Hiyakake
Since its debut in May as part of the first wave, the Myoga Hiyakake has remained the runaway bestseller. Due to overwhelming popularity, it will continue to be available beyond July. The crisp, lively texture and distinctive aromatic freshness of myoga (Japanese ginger) provide the perfect accent to the rich, chilled broth. Fans of this cult-favorite flavor can continue to enjoy it alongside the new menu items.
Sharyo’s Ultimate Summer Luxury: Finish with "Hiyakake Chazuke"!
An essential way to enjoy the Hiyakake series is the fan-favorite finishing style: "Hiyakake Chazuke."
After finishing the noodles, add a serving of rice (150 yen) directly into the remaining umami-rich broth. The premium toppings—whether from the new "Shirasu Oroshi," "Oni Oroshi," or "Myoga"—infuse the rice, transforming the dish into an exquisite, light, and savory Japanese-style rice soup that’s effortlessly satisfying. This is Sharyo’s recommended way to enjoy every last drop—luxurious, refreshing, and utterly delicious from start to finish.
