Oisix.co.jp Co., Ltd. Background of the launch of the "Anamizu Gyoza Japan's Best Project": A New Menu for the Revival of the "Maie mon" (Delicious Things) Village
Anamizu Town, located in the center of the Noto Peninsula and known as the "Gateway to Oku-Noto," benefiting from its calm inland sea, used to hold the "Anamizu Maie mon Festival," themed around seasonal ingredients of each season, as a village of "Maie mon" (delicious things). However, due to various factors such as a shortage of successors due to aging populations and poor crop growth due to environmental changes, the number of participating stores in the Maie mon Festival, which once peaked at 25, decreased to 11, and further reduced to 6 stores due to the impact of the 2024 Noto Peninsula Earthquake. Driven by a sense of crisis over the decline in tourists after the disaster and a desire to revive the village of Maie mon, the Anamizu Town Tourism and Products Association took the lead in developing a new menu. As part of the "Noto's Food" project activities of the Keizai Doyukai (Japan Association of Corporate Executives) - Mutual Aid Capitalism Realization Committee, Noto Peninsula Support Initiative, the "Anamizu Gyoza Japan's Best Project" was launched. As a member of this initiative, our company established the manufacturing system for consumers.
The biggest feature of "Anamizu Gyoza" is that it uses Noto's traditional seasoning "ishiru" (fish sauce) as a hidden flavor. Because "ishiru" greatly enhances the umami of the entire ingredients, it has a rich and deep flavor that is delicious even without dipping sauce. Currently, it is offered at 7 restaurants in town, with flavors completed after trial and error, each store adding its own unique arrangement. By using dried daikon radish in the ingredients, you can enjoy a "crispy delicious!" texture and umami no matter which store you visit.
Aiming for 300 Participating Stores with a Year-Round Local Gourmet Food
The "Anamizu Maie mon Festival" has themed around seasonal ingredients of each season, but there was no signature dish offered year-round until now. While considering new menu items, gyoza, which can "wrap any ingredient," emerged as a candidate. Depending on the filling ingredients, cooking method, and sauce, it can be arranged in Japanese or Western styles, and because it is not a staple food, it was decided that it could become a gourmet item that all restaurants in Anamizu could participate in.
In the future, we aim to expand to 300 participating stores, and it is expected to evolve into a diverse "Anamizu Gyoza" that can be eaten with creative cooking methods and original sauces at each store in Anamizu Town. As for our company, with this initiative as an opportunity, we hope to contribute to the expansion of offerings in Anamizu Town and the Noto region.
