The main variety is the large, elongated 'Rakuda' type, while smaller, round 'Tama' type shallots are also grown in Hokuei-cho. Commercial cultivation began in the Taisho era, and today, rakkyo is recognized as a major local specialty.

Based on research by the Tottori Industrial Technology Center, the sake lees have been refined to be more 'eatable' by suppressing the unique pungent flavor and highlighting the umami and nuttiness.
