[About Hand-Stretched 製法 (Tenobe)] The process involves kneading flour and water, then repeatedly stretching the dough into long strands without using knives, taking over 30 hours to complete. This creates a silk-smooth surface and excellent texture, often compared to the elegant "Lady's Udon of Bitchu."
