FHG HOTELS (fav hospitality group Co., Ltd., Representative Director: Hidekazu Ogata) and GREENING Inc. (Shibuya-ku, Tokyo, CEO: Masato Sekiguchi) have released the brand movie for "HOTEL FORK & KNIFE Miyajima".

This film, which expresses the hotel's concept "Tradition Served Quietly.", depicts the time spent quietly facing the land overlooking Miyajima, and the experiences of food and art that breathe there, along with the culture and history of this region.

To coincide with the release of the movie, we will reintroduce the charm of "HOTEL FORK & KNIFE Miyajima", which opened on March 28, 2026, in Miyajima-guchi, Hiroshima, focusing on the two axes of "food" and "art".

Food - The hotel's local gastronomy At this hotel, conceived as a "place for quiet understanding" of the Hiroshima and Miyajima region, the "food" experience is a major attraction. Hiroshima is known as a "miniature Japan". Rain that falls on the mountains becomes rivers, carrying nutrients and minerals from the forests as they flow into the Seto Inland Sea. In this rich land blessed with the bounty of mountains and sea, we use the primitive cooking method of "wood fire" to fully draw out the inherent power of the ingredients, delivering a culinary experience that can be enjoyed with all five senses.

The cuisine offered at HOTEL FORK & KNIFE Miyajima is an 11-course dinner that reflects the climate of Hiroshima, from mountains to sea. Each dish, inspired by the ingredients of Hiroshima and the voices of the producers, carries a story as a representative of the land. We offer a culinary experience that reinterprets Hiroshima's local cuisine and Japan's unique cooking methods for the modern era, drawing out the essence of the ingredients through the very natural technique of "wood fire".

Raw Oysters, Fermented Lemon, Matsu

This dish, featuring raw oysters, a symbol of the Seto Inland Sea, is combined with yogurt pudding from local dairy company Chichiyasu. The acidity of the yogurt enhances the mellow sweetness of the oysters, with the refreshing flavor of fermented lemon as an accent.

Local Chicken, Lemon Pepper, Kuroboshi

Wood-fired grilled "Koijidori" from Higashi-Hiroshima, raised for several times the usual number of days. The balance between the crispy skin and the moist, tender chicken is exquisite. Enjoy the deep flavor with salt seasoned with kuroboshi, which is also used in herbal medicine, and lemon pepper.

Conger Eel Rice

An original, modern take on Miyajima's specialty conger eel rice. Cooked with fragrant roasted green tea, it is gently seasoned with a sweet sauce made from conger eel bones. The freshly cooked rice, milled and cooked in a clay pot just before serving, is also a highlight.

Art - Spatial design by Fumihiko Sano and artworks themed around "Keihaku"

The hotel's design was handled by architect and artist Fumihiko Sano. After apprenticing as a carpenter at the renowned traditional Japanese construction company "Nakamura Gaiji Kōmuten" and physically learning construction methods, materials, and sense of proportion through hands-on experience, he became independent in 2011. In 2016, he traveled to 16 countries as a cultural exchange envoy for the Agency for Cultural Affairs, and has received awards both domestically and internationally, including EDIDA 2014 ELLE DECO Young Japanese Design Talent and IF DESIGN AWARD 2020.

In this space, created through the renovation of existing buildings, the characteristics of natural materials such as cedar, cypress, and stone are utilized as they are, while respecting the refined skills of artisans. The space combines traditional materials with new materials and applications.

The entrance is a gallery space inspired by the Noh stage of Itsukushima Shrine. The ceiling design is inspired by the lantern procession of Miyajima, and lighting produced within the prefecture emits a soft glow. The 34 rooms in 10 types incorporate traditional Japanese design elements such as raised tatami areas and shoji screens, combined with contemporary materials and art.

The space is designed to be a place where guests can savor the time leading up to their journey to Miyajima, the sacred island, and the "afterglow" upon their return.

Breathing life into this space are the numerous artworks curated under the concept of "Keihaku" (繋泊). This word, meaning "to moor a ship" or "to anchor", embodies the desire to connect Itsukushima Shrine and Miyajima-guchi, people to people, and new experiences. Works by emerging domestic artists, expressing new forms of traditional Japanese arts and crafts such as calligraphy, ink painting, Japanese painting, and ceramics, are scattered throughout the building. The aim is to create a place for new connections between artists and writers active in Japan and the hotel guests.

Daichiro Shinjo / Calligraphy - 2F Lobby

Born in Miyakojima, Okinawa. With a grandfather who was both a Zen monk and a folklorist, he pursues contemporary calligraphy unbound by form, rooted in Zen and Okinawan spiritual culture. The concept of this work is "Ma" (間). It is created with the theme of evoking the "Ma" where the tension and emotional changes before crossing to the sacred island of Itsukushima, and the body and spirit become interconnected.

Yuta Niwa / Japanese Painting - 2F Lobby

Born in Kanagawa in 1993. After completing his graduate studies at Kyoto University of Art and Design, he studied abroad in Beijing. He currently lives and works at Kōmyō-in, a sub-temple of Tōfuku-ji Temple. Using the context and techniques of Japanese painting, his subject matter is the unseen calamities and human prayers to resist them. "Sōkai Shuketsu-zu" (滄海朱楔図), exhibited in the 2F lobby, depicts the "Ōhanzaki" (大鯢), a symbol of the raging nature lurking in the land of Hiroshima, and the "vermilion wedge" that restrains it. The vertical vermilion line piercing the screen symbolizes the torii gate of Itsukushima and is likened to a "wedge" descending from heaven and driven into the sea.

Hiroki Miura / Ceramics - 2F Lobby & Guest Rooms

Born in Hiroshima. After graduating from Arita Pottery Technical College, he became independent in 2020. He established a studio in Takeo City, Saga Prefecture, and creates richly expressive ceramic works using both traditional open-firing techniques and modern kilns. Large vases, inspired by the design of window paintings on pottery, are installed in the 2F lobby and the premium suite "Sui".
