'Serious Carbonara' Made with 3 Egg Yolks: Kobe's Tamago Dining Celebrates 1st Anniversary with Dinner-Only Revival from April 9

Tamago Dining 'Tamago to Tamago', an egg specialty restaurant in Kobe Motomachi, has welcomed over 19,000 guests in its first year since opening. To celebrate our 1st anniversary, we are reviving the highly popular 'Serious Carbonara' from our grand opening, exclusively for dinner. We propose a dish that only an egg specialty store can create, finished with only 3 egg yolks.

Everything started with a single bowl of raw egg on rice (tamago kake gohan).

Freshly laid eggs eaten at a poultry farm in Aichi Prefecture. With that single bite, we were shocked by the inherent umami and power of the egg. 'I never knew eggs could be this delicious.'

Triggered by this experience, we resolved to redefine eggs not as a 'supporting ingredient' but as the 'star of the dish'.

Raw egg on rice, rolled omelet, omurice— By carefully reconstructing dishes that everyone knows while facing the ingredients, we are elevating everyday dishes into special experiences.

### 3 Eggs, No Cream. 'Serious Carbonara'

The carbonara we are reviving this time is a dish that we, as an egg specialty store, have seriously committed to, insisting on 'making it work with the power of eggs alone.'

Unlike general carbonara served in Japan, we do not use any cream at all. We use 3 egg yolks, and the richness is established solely by their depth and emulsification.

What spreads the moment you put it in your mouth is not heaviness, but 'density.' It is designed so the natural umami of the egg is transmitted directly.

Furthermore, we use specially selected fresh pasta for the noodles. The cross-section is egg-shaped, creating a structure that securely holds the sauce.

Because of this shape, the umami of the egg spreads evenly with every bite, realizing a unified taste until the very end.
