Sweet potatoes are loved for their sweetness and creamy texture, whether steamed, roasted, or cooked into porridge. Many people habitually place them directly into the refrigerator in their original plastic bags, believing that low temperatures extend shelf life. However, according to the Ministry of Agriculture, sweet potatoes are tropical crops that are sensitive to cold. The temperature of a typical home refrigerator (around 5–8°C) is lower than the ideal storage range (13–15°C), and refrigerating them directly may cause chilling injury, resulting in brown spots, surface indentations, or hard cores even after prolonged cooking.
Should sweet potatoes be stored at room temperature or in the fridge? Here’s the correct way to store them.
Don’t refrigerate sweet potatoes! Low temperatures can make them hard
The Ministry of Agriculture’s Agricultural Knowledge Portal states that the ideal storage temperature for sweet potatoes is about 13–15°C. In professional long-term storage facilities, temperatures are maintained around 15°C with relative humidity of 85–90%. However, most home refrigerators operate at 5–8°C—too cold for sweet potatoes. Storing them uncovered in the fridge can lead to chilling injury, causing brown spots, indentations, or water-soaked marks on the skin, and hard lumps inside. This results in dry, tough texture and difficulty softening even after extended cooking. The Ministry’s food and agriculture education materials also warn that cold-sensitive produce like sweet potatoes and bananas should be kept in cool, well-ventilated areas and not refrigerated immediately after purchase.
Winter storage: Open the plastic bag and store in a cool, ventilated place
When temperatures are cooler, open or remove the plastic bag after bringing sweet potatoes home to prevent moisture buildup. Lay down newspaper on the floor or in a cardboard box, spread the sweet potatoes out, and place them in a shaded, cool, and well-ventilated area. You can also use perforated cardboard boxes, bamboo baskets, or plastic crates—just avoid sealing them completely to reduce the risk of mold and rot.
Most households cannot maintain a constant room temperature of around 15°C, so actual storage duration depends on the season, humidity, and freshness at purchase. According to the Ministry, sweet potatoes can last about a month in a well-ventilated area, but this period shortens significantly in hot, humid conditions. Regularly inspect them and remove any damaged or rotting ones immediately.
Summer storage: Wrap in newspaper and place in the fridge’s lowest compartment
In summer, high temperatures can cause sweet potatoes to sprout, lose moisture, wrinkle, or become hollow within 3–4 days at room temperature. If you can’t eat them quickly, wrap each sweet potato in newspaper and place them in the lowest drawer or vegetable compartment of the fridge. This prevents direct exposure to cold temperatures and reduces moisture loss.
However, newspaper-wrapped refrigeration is a compromise for extremely hot summers and does not mean sweet potatoes are suited for long-term fridge storage. If the newspaper becomes damp during storage, replace it with dry paper. If sweet potatoes develop large indentations, oozing liquid, strange odors, or rot, do not continue storing or eating them.
Don’t wash before storage! Moisture increases sprouting and spoilage risk
Some people wash sweet potatoes with a scrub brush to remove dirt before storing them in cabinets or the fridge. The Ministry of Agriculture advises against washing before storage—only clean and peel them just before cooking. Scrubbing can damage the skin, and residual moisture increases the risk of sprouting, mold, and rot.
Before storage, simply brush off dry soil and check for wounds. Sweet potatoes with bruises, cuts, or insect damage are more prone to bacterial entry through wounds, leading to gradual rot. Eat these first and avoid storing them with intact ones for long periods.
Can you eat sprouted sweet potatoes? Not toxic, but quality declines
Unlike sprouted potatoes, sprouted sweet potatoes do not produce toxic substances like solanine. According to the Ministry’s Food and Agriculture Education Integration Platform, sprouting consumes moisture and starch, reducing sweetness, making texture dry and hard, and lowering nutritional value—but sprouting itself is not toxic. If sprouting is minimal and there’s no mold, rot, or odor, remove the sprouts and cook as usual.
However, if white fungal threads appear, brown sunken spots develop, or the sweet potato is rotting, smelly, or oozing liquid, it may be infected with pathogens, and fungal threads could have penetrated deep inside. Even if you cut off the moldy surface, it’s not recommended to eat. Wrinkled, overly soft sweet potatoes or those with black insect holes may also have degraded freshness and internal quality.
What if you bought too many? Cook and freeze for convenience
If you’ve bought too many sweet potatoes to eat before they spoil, steam or roast them first, let them cool, then store in sealed containers or freezer bags. Reheat only the portions you need later. This method preserves quality better than long-term refrigeration of raw sweet potatoes and reduces waste from sprouting or rotting.
When selecting sweet potatoes, choose plump ones with smooth, unblemished skin and no wounds or insect holes. Those already sprouting, wrinkled, or mechanically damaged have shorter shelf lives and are more prone to rot. After purchase, store according to season—ventilated storage or newspaper-wrapped refrigeration—and wash only before cooking to prevent sprouting, mold, and hard, unpleasant texture before finishing them.
