Taiwan's summers are hot and humid, and when it comes to food safety, people tend to focus only on whether food has soured or spoiled, overlooking invisible mold toxins. Doctors warn that besides peanuts, nuts, grains, and traditional Chinese medicinal materials, improperly stored dry goods such as coffee beans and spices can also become contaminated with mold. Household appliances like washing machine drums, refrigerator ice-making systems, and damp books may become overlooked hygiene blind spots.
Dr. Wang Wei-Chuan,院长 of Ultra All-Round Clinic, explains that mold thrives in warm, humid, and poorly ventilated environments, and certain molds can produce toxins posing health risks. Since mold toxins cannot always be detected by appearance or smell, proper food storage and home environment management are especially important.
Peanuts and nuts are commonly known high-risk foods for mold toxins, but grains, spices, coffee beans, and certain dried herbal ingredients can also become contaminated if stored in damp conditions for long periods. Dr. Wang notes that many people assume high-temperature cooking eliminates all risks, but some mold toxins are heat-resistant—meaning even if the mold is destroyed by heat, the toxins already produced may not be fully removed.
He recommends buying dried goods and nuts in small quantities and consuming them quickly. After opening, store them in sealed containers, and refrigerate or freeze when necessary. If food develops an off odor, discoloration, clumping due to moisture, or visible mold, do not just cut off the surface and continue eating, nor attempt to reheat it. The safest practice is to discard it entirely.
When purchasing food, check whether packaging is intact, the source is clear, and the expiration date is valid. Prioritize brands with traceability systems or self-implemented quality control measures to reduce contamination risks during manufacturing, transportation, and storage.
Beyond diet, household moisture must not be ignored. Dr. Wang points out that wall leaks, efflorescence (wall cancer), standing water, and prolonged dampness can create ideal environments for mold growth. If leaks or visible mold are found at home, address the moisture source first, maintain indoor ventilation, and moderately dehumidify.
Washing machine drums remain damp for long periods and can accumulate grime if not cleaned regularly. Water tanks, pipes, and filters in automatic ice-making systems of refrigerators may also become cleaning blind spots due to constant exposure to moisture and should be cleaned and replaced according to manufacturer instructions. Before restarting after long-term disuse, complete cleaning and flushing are essential.
Indoor potted plant soil, damp books, cardboard boxes, and fabric items may also foster mold growth if environmental humidity is too high. Doctors recommend keeping indoor humidity below 60%. Air purifiers with high-efficiency filters are preferable, but the most critical step remains identifying and eliminating sources of leaks and dampness.
Fatigue and brain fog have many potential causes and should not be self-diagnosed based on a single test. Dr. Wang reminds that fatigue, headaches, insomnia, nasal discomfort, allergies, or difficulty concentrating may relate to sleep, stress, infections, allergies, or other diseases, and symptoms alone should not lead to the conclusion of mold toxin exposure.
If someone experiences persistent discomfort that doesn’t improve with general lifestyle adjustments, they should seek a qualified physician for a full medical history review and necessary examinations. Some medical institutions offer self-paid mold toxin tests, but results must be interpreted comprehensively by a doctor. Self-diagnosis or treatment based on a single number is not advisable.
