Coffee has become an indispensable beverage in the daily lives of many people. In addition to purchasing freshly brewed coffee at chain stores, buying coffee beans or ground coffee for home brewing is also extremely common.

However, in Taiwan’s relatively warm and humid climate, if coffee beans are not properly stored, they can easily become contaminated by Aspergillus ochraceus present in the environment, which may metabolize and produce ochratoxin—a substance hazardous to human health.

Chao Ming-Wei, Associate Professor at the Department of Bioscience and Biotechnology at Chung Yuan Christian University, points out that the core principles of food preservation lie in properly controlling four key factors: temperature, humidity, air, and light. Aspergillus ochraceus is widely present in natural environments such as air, soil, and water sources, and sometimes adheres to the surface of plant fruits. Taiwan’s humid climate provides ideal conditions for the growth of such molds.

Related studies indicate that long-term intake of ochratoxin may lead to diseases and even increase cancer risk. However, experts emphasize that there is no need for excessive panic, as health impacts typically result from prolonged accumulation. Establishing correct storage habits early is the most effective preventive measure.

Commercially available fresh coffee beans often come in packaging designed specifically for preservation. Professor Chao explains that most retail packaging uses aluminum foil material primarily to block light, while the one-way degassing valve on the package helps balance internal and external temperature and moisture levels. Under normal conditions, these original-packaged coffee beans have a shelf life of approximately 3 to 6 months.

When consumers wish to store coffee beans for longer periods, they often consider transferring them to sealed jars or placing them in refrigerators or freezers. Chao notes that storing beans away from light and in airtight containers is relatively safe and stable. However, he particularly warns against using household refrigerators, which are frequently opened and closed throughout the day and contain various raw and cooked foods. The complex environment and high humidity inside refrigerators can easily lead to cross-contamination, meaning that storing coffee beans in the fridge may actually make them more susceptible to environmental damage.

So how can freshness be extended? What long-term storage method do experts recommend?

For consumers needing to store coffee beans over the long term, Chao strongly recommends “freezer storage.” By freezing the beans at low temperatures and using completely sealed, light-blocking containers, interference from ambient moisture and contaminants can be significantly reduced, preserving bean quality.

Chao emphasizes that while brewing and enjoying coffee is just part of daily life, the principles derived from proper coffee bean storage—including careful selection of packaging materials, deep understanding of food ingredient characteristics, and awareness of environmental changes—can be broadly applied to the management of all everyday foods. By mastering these fundamental principles, people can enjoy delicious beverages while ensuring dietary safety and health.
