At Wolfgang's Steakhouse, only rare beef graded "Prime Grade," the highest quality classification by the U.S. Department of Agriculture, is used. The meat, sourced chilled (not frozen), undergoes a 28-day dry-aging process in a dedicated in-store aging room under controlled temperature and humidity. The dry-aged beef, enhanced in flavor and tenderness, is cut thick and seared at once in a 900°C oven directly on the serving plate, then delivered straight to the customer's table.

In Japan, in addition to locations in Roppongi, Marunouchi, Osaka, and Fukuoka, the Takanawa store opened in September 2025 as the newest outlet. The "Nagoya store," the first in the Chubu region, is scheduled to open in September 2026.

Additionally, under new brand concepts, the more luxurious "Signature" has launched in Aoyama, and "Teppan," focusing on enjoying premium steaks crafted with Wolfgang's Steakhouse's "quality, aging, and grilling" philosophy on an iron griddle, has opened in Ginza.
