● About "Chanko Edozawa"
Founded in 1974, we have inherited the traditional taste from our founder, a former sumo wrestler. Edozawa is committed to the traditional "soup" cooking method for chanko nabe, and we specifically make our soup from "old chickens (hine-dori)" which have a strong umami flavor. For seasoning, we offer three types of soup: our signature soy sauce flavor, which is a unique blend of usukuchi (light soy sauce) and koikuchi (dark soy sauce) to bring out the umami and aroma of the chicken broth, as well as miso and salt flavors.

1 Chicken Soup Nabe
In the sumo world, chicken bones (bones of chicken after meat has been removed, used for making broth) are called "sop," and we make our soup from the bones of "old chickens (hine-dori)" which have a particularly strong chicken umami. The seasoning is a unique blend of "usukuchi soy sauce" and "koikuchi soy sauce," allowing you to enjoy the umami and aroma of the soup, which has both saltiness and richness. We also provide "Chanko Nabe" where the chicken broth is well-absorbed into the chicken and vegetables, and the deliciousness spreads with a pleasant chewiness in the customer's mouth.

We offer hearty chanko nabe with plenty of ingredients. Considering taste and nutritional balance, we are particular about the combination of 12 types of ingredients. The addition of moisture and umami from various vegetables to our signature soup creates a uniquely flavorful hot pot.

About the Origin of "Chanko Nabe"
Eating hot pot in sumo stables began in the Meiji era. It started when the Dewanoumi stable, headed by the 19th Yokozuna, made nabe the main meal as "sumo stable chanko." While there are various theories about its origin, it is said to come from the relationship between the stablemaster and disciples in sumo stables, where the master is called "Chichi" (father) and the disciple is called "Ko" (child), and it is called "Chanko" because they eat it together. It also contains a good balance of vegetables, mushrooms, tofu, meat, and fish, and is easy to digest because it is simmered, warming the body and improving metabolism. It is one of the healthy dishes born from the Japanese climate.
