Ramen Zundouya to Launch Shanghai-Inspired Light 'Tanrei Tonkotsu Ramen' Nationwide on June 1

ZUND Co., Ltd. (Headquarters: Osaka City, Osaka Prefecture; Representative Director and CEO: Shinsuke Baba), operator of the Himeji rich pork bone ramen chain 'Ramen Zundouya', will begin selling the light 'Tanrei Tonkotsu Ramen' at all stores nationwide starting Monday, June 1, 2026.

'Ramen Zundouya' was born on April 4, 2002, in the castle town of Himeji City, Hyogo Prefecture. Internationally, they operate a total of 7 stores in Shanghai, China, and Jakarta, Indonesia (as of May 25, 2026), and 112 stores domestically. Welcoming up to over 800 customers a day at peak times, the chain sees a high volume of guests day after day.

The newly introduced light 'Tanrei Tonkotsu Ramen' took a hint from the clear soup sold at the 'Ramen Zundouya' in Shanghai, China. It was created in 2025 and had been sold on a trial basis at select domestic stores. After its initial launch, it was loved by many customers, receiving numerous positive reviews such as 'the tonkotsu flavor comes through solidly' and 'it's a sensation unlike anything before.' Given the response exceeding expectations, the decision was made to launch it nationwide.

The greatest feature of the light 'Tanrei Tonkotsu Ramen' is its transparent soup base that retains the rich flavor of pork bones while delivering a refreshing aftertaste. Using the same pork bones as their standard 'Rich Tonkotsu', the unique flavor of 'Tanrei Tonkotsu Ramen' is achieved by completely eliminating the odor through meticulous preparation and artisanal heat adjustment. For 'Ramen Zundouya', which has historically rolled out 'Rich Tonkotsu' as its flagship product, this is a challenging bowl focused strictly on a 'light' profile. The base soup comes in two varieties, 'Soy Sauce' and 'Salt', and the noodles are offered in two types, 'Thin' and 'Curly'. You can enjoy different tastes depending on the combination, allowing you to experience 'Tanrei Tonkotsu Ramen' exactly to your preference.

Since the founding of 'Ramen Zundouya', their signature 'Rich Tonkotsu' ramen has been characterized by its smooth, rich, yet mild tonkotsu soup, simmered for over 10 hours using only water and pork bones. They are particular about their homemade noodles, using high-quality wheat flour to create noodles that offer the rich aroma and elasticity inherent to wheat. Despite its richness, it boasts a clean aftertaste without any strong habits, making the original Himeji rich pork bone ramen one of their flagship products.

'Tanrei Tonkotsu Soy Sauce Ramen' features a soup using a homemade soy sauce base blended from three types of soy sauce. It is a well-balanced bowl where the umami and sweetness of the pork bones stand out firmly against the sharp flavor of the soy sauce. Despite its light mouthfeel, the distinct richness and depth of 'Ramen Zundouya's' tonkotsu linger as an aftertaste.
