Just two years after the opening of "Charles-Henry," a tart shop by French owner-chef Charles-Henry Lebourg. The challenge that has captivated so many fans now moves to a new stage.
As the long-awaited second store, the French bakery specializing in croissants, "Doré by Charles-Henry," will open on July 6, 2026 (Mon.) in front of Daikanyama Station, alongside the tart shop.
The owner, who has gained support in Daikanyama, is taking on a new culinary adventure: a reinterpretation of the bakery culture essential to French daily life. We will offer croissants packed with authentic tradition and dedication.
The star of this shop, the croissant, begins with uncompromising ingredient selection. The rich aroma of the highest quality French butter and the abundant flavor of carefully selected French flour. By layering these meticulously using traditional methods and baking them one by one, we have achieved an exquisite texture that is crispy on the outside and surprisingly moist on the inside.
Beyond its taste, the croissants proposed by Doré embody a modern aesthetic that excites the heart the moment you hold them. They elevate everyday moments into special experiences through both sight and taste.
Furthermore, the store space is filled with Doré's unique attention to detail. Inside, a symbolic brand tree stands proudly, and a unique space unfolds with a creative decoration of 400 croissants on the walls.
Enjoy an eat-in time surrounded by the aroma of freshly baked goods in its modern interior. Or, take them home to add color to special days or everyday life. Doré proposes a new way of living with bread, a place where French food culture intersects with Tokyo's sensibilities.
As a new landmark in Daikanyama, please experience the world of croissants created by the French owner with all your senses.
About Doré
The name "Doré" means "golden" in French. The beautiful baked color of freshly baked croissants is like the sunshine pouring down on Daikanyama. This radiance embodies our wish to brightly illuminate our customers' daily lives and enrich every day.
While retaining the beautiful sound of the French language, "Doré" is also a familiar and endearing sound in Japanese, evoking warm feelings with every utterance.
May your day be filled with positive energy, along with our finest golden-hued creations.

Fusion of France and Japan and "Charles-ism"
French cuisine and Japanese food. Though seemingly different cultures, these two cuisines share a warm philosophy. "Doré" in Daikanyama is also built upon "Charles-ism."
Eating is not just about nutrition; it is an art to be enjoyed with all five senses. The time spent savoring the colors, aromas, textures, and even the sound of freshly baked goods adds color to everyday life. Behind each dish lies the relentless pursuit of new deliciousness by artisans who constantly hone their traditional skills.
A luxurious lineup of 17 varieties, utilizing croissant dough for everything from sweet pastries to savory dishes.
What Doré values most is "the vitality of ingredients." Utilizing the power of seasonal blessings as they are. This is a deep respect for nature and a sincere attitude that brings out the inherent individuality of the ingredients. And supporting that taste is the power of "UMAMI." As seen in the dashi of Japanese cuisine and the fond of French cuisine, the rich umami extracted through time and effort brings unforgettable depth and lingering flavor to dishes.
A colorful product lineup overflowing with individual character.
And the spirit of "hospitality" that considers others. Dishes born from the warm desire to please someone bring smiles to the table and connect people's hearts.
These are all world-class food cultures common to both Japanese and French cuisine. Chef Charles, who understands and deeply loves both Japanese and French cuisine, has applied his unique interpretation to create "Charles-ism," a shop where you can enjoy supreme croissants, elevated into works of art, in a way that blends into your daily life.
