The 'tail meat,' which is often undervalued due to its culinary difficulty, has been transformed into three distinct flavors under the supervision of Chef Fumio Yonezawa of 'No Code,' Chef Ryosuke Tamura of 'Chuka,' and Chef Norifumi Endo of 'Ebisu Endo.'
