A Dacquoise with a 'Fluffy, Soft' Texture Crafted from Premium Ingredients

'Kyaramoko Uma!!' is a delicately baked dacquoise made by combining two types of carefully selected almonds—Sicilian and Californian—with black soybean kinako and kuzu starch, resulting in a light, 'fluffy, soft' texture.

By layering the rich, roasted aroma of almonds with the deep, savory fragrance unique to black soybean kinako and the smooth melt-in-the-mouth quality of kuzu starch, the confection delivers a 'fluffy-soft' texture that gently dissolves upon contact with the tongue.

Inside the dacquoise shell, we generously enclose a house-made raw caramel cream, crafted by slowly simmering burnt sugar with Hokkaido fresh cream and butter, then allowing it to rest overnight.
