[Chilled & Delicious] Glazed Moji Lemon

Development Background — Young Staff-Led Initiative for a Summer Moji Manju

Moji manju, a beloved confection representing Hiroshima, has long been cherished by many.

Under the theme of 'Can we create a moji manju that's more delicious and refreshing to enjoy even during hot summers?', this project was developed primarily by young employees.

Through trial and error with flexible thinking beyond conventional wisdom, they arrived at the perfect combination: 'glaze (sugar coating)' × 'refreshing lemon' × 'moji manju' — where chilling enhances the 'crispy' texture to its fullest.

Pursuing the Perfect Sweet-Tart Balance: A Lemon-Infused Masterpiece

After extensive experimentation with the ideal balance of sweetness and acidity for summer, the team decided to omit the traditional 'anko (sweet bean paste)' filling, instead highlighting the deliciousness of the dough and glaze themselves.

● Moist & Fluffy 'Special Lemon Dough'

The base is the dough from 'Mojiyaki,' a product showcasing Nishikido's long-honed techniques.

Retaining Mojyaki's signature soft mouthfeel, the dough is blended with lemon paste made from Setouchi-grown lemons.

● 'Pastel Yellow Glaze' for a 'Crispy!' Texture

The dough is coated with a charming pastel yellow lemon-flavored glaze.

Designed for a light, non-heavy mouthfeel.

● Accent with 'Setouchi-Grown Lemon Peel'

Topped with lemon peel from Setouchi as a finishing touch.

The lemon peel adds a refreshing aroma and pleasant tartness as a delightful accent.

What is 'Mojiyaki'?

Mojiyaki is a small, unfilled castella cake shaped like a maple leaf, sold by Nishikido.

It has a moist texture and comes in two flavors: chocolate and milk.

Mojiyaki is also used as a topping for soft-serve ice cream blended with anko.

※ Soft-serve available only at: Nishikido Nakasuji Store, Miyajima Store, and Fukuyama Minami-Zao Store

※ Mojyaki topping is available only on the Special Cup

Left: Milk flavor, Right: Chocolate flavor — Koshian Soft Special Cup

The 'Crispy' Texture Shines When Chilled

[Chilled & Delicious] Glazed Moji Lemon

Even when eaten at room temperature, you can fully enjoy the moist, fluffy dough and refreshing lemon flavor. However, chilling enhances the crispy texture of the glaze, creating a delightful contrast with the soft, tender interior.

Pairing with refreshing black tea or carbonated water is especially recommended. We invite you to savor this chilled summer treat that adds a cool touch to your tea time.

※ Sold refrigerated at stores.

※ Each piece is handmade.
