Miso Noodle, the operator of donabe miso ramen 'Takesan' (Headquarters: Miso Noodle, Main Store: Obuse, Nagano Prefecture, Representative: Tetsuaki Takeda), supported by Ascendia Holdings (Representative: Akira Tsuchiya), opened its second store in the Le Marais district of Paris on July 14, 2026.
Since the opening of its first store in April 2024, 'Takesan' has received strong support from both local Parisians and tourists, leading to the opening of a second location within just two years. Both the first and second stores are operated in partnership with local Paris-based food and beverage companies.
Due to intermittent heatwaves across Europe, the grand opening event will be held in late August to avoid extreme temperatures.
Performance and Background of the First Store
On April 13, 2024, 'Takesan' opened its first European location in central Paris. The unique concept of 'authentic miso ramen served in a donabe (clay pot)' stood out even in Paris, a city with a well-established ramen culture. Since opening, the restaurant has been nearly fully booked every day. Awareness has spread through word of mouth among local French customers, tourists from across Europe, and Japanese cuisine enthusiasts, resulting in strong growth and the opening of a second store within two years.
Location of the Second Store: Le Marais, Paris
Le Marais is a historic district spanning the 3rd and 4th arrondissements of Paris. While preserving medieval mansions and cobblestone streets, it is also a leading cultural hub where cutting-edge fashion, contemporary art, and diverse gourmet offerings coexist. About Donabe Miso Ramen 'Takesan'
Founded in 2008 in Nagano City, Nagano Prefecture by owner Tetsuaki Takeda with the goal of creating a signature ramen for Nagano, 'Takesan' is a specialty donabe miso ramen restaurant. The ramen is served piping hot in a clay pot, using Shinshu miso traditionally brewed in wooden barrels by 'Kokuhira Miso Brewery' in Obuse, Nagano. A unique feature is the optional 'zousui' (rice soup), which customers can enjoy using the leftover broth after finishing their meal. The menu also includes a vegan-friendly option, the 'Shinshu Miso Brewery Ramen,' made without any animal-derived ingredients, catering to diverse dietary cultures and restrictions.
International expansion is being conducted with the support of Ascendia Holdings Inc., and the brand is currently operating in three countries: Mongolia (Ulaanbaatar), France (Paris), and Poland (Warsaw). This new Le Marais store marks the second location in France.
Features of the Second Store: Seafood-Based Miso Ramen Series
At the Le Marais location, 'Takesan' will launch a new 'Seafood Miso Ramen' series in addition to the existing Shinshu miso-based lineup. This new style combines a rich seafood broth made from Hokkaido kelp, niboshi (dried sardines), and katsuobushi (bonito flakes) with the fermented umami of Shinshu miso. As an exclusive menu item available only at the Le Marais store, it differentiates this location from the first. Tailored to Parisians' preference for seafood and fermented foods, this is a fresh proposal to convey 'Japan's dashi culture enjoyed in a donabe' in a broader form.
