On July 17, 2026, Ramen Makotoya will grand open the 'Okayama Ogumi' branch—the second location in Okayama Prefecture and the 110th nationwide—as part of its dominant regional strategy.

[Five Key Craftsmanship Points]
① The 'soup,' the lifeblood of any ramen shop, is a rich beef bone white broth made by simmering large quantities of domestic beef bones—each weighing 5kg—using special large pressure kettles for over five hours. Despite our expansion, we continue to prepare this broth fresh daily at every location.
② The rich 'gyu-paitan' broth, made from 100% domestic beef bones, is remarkably smooth and completely odorless, with a refined richness that includes protein. To best complement this broth, we use low-hydration straight noodles that highlight the natural flavor of wheat. After 48 hours of maturation, these noodles cling perfectly to the rich broth, and their slightly firm texture enhances the soup’s smoothness.
③ 'Spicy miso,' developed through years of research since our founding, is an original miso paste created by blending various spices and fruit juices, kneaded into special miso, and then aged. When dissolved into the soup, it adds depth and flavor.
④ The aromatic oil, also known as 'mayu,' is made using a 'three-stage infusion method,' combining garlic fried at three different time and temperature settings to maximize its fragrance and aroma. This richly flavored condiment greatly enhances the taste of our beef-based ramen.
⑤ The chashu pork uses high-quality pork belly with a balanced ratio of fat and lean meat. Carefully sliced at each store to preserve texture and fiber, it is simmered in a special house-made tare and prepared using our unique in-store method, resulting in a melt-in-your-mouth, deeply flavorful specialty.
