Sea urchins are high-demand luxury ingredients, but they are also a direct cause of isoyake, raising sustainability concerns. Kitasanriku Factory has been working on environmental restoration through 'regenerative aquaculture,' while Mizkan has been exploring ways to contribute to sushi culture through its pursuit of 'deliciousness and health.' The companies will leverage Mizkan's food processing know-how and marketing power to promote the social implementation of land-based sea urchin farming.
