Fuuki Seimen Kenkyujo will reopen its Sakura Machi store on the B1 floor of SAKURA MACHI Kumamoto on July 3, 2026 (Fri.) as a restaurant specializing in "Rindo Pork Ramen."

The concept for this renovation is "Kumamoto in a bowl."

We have packed the essence of the region into each bowl, centering on Kumamoto's proud brand pork, "Kumamoto Rindo Pork," and incorporating Kumamoto and Kyushu wheat, Ariake Sea seaweed, Kumamoto vegetables, and Kumamoto soy sauce.

This project aims to deliver "Kumamoto's deliciousness" through ramen, an everyday meal, to both local residents and tourists visiting Kumamoto.

The project originated from "Food Paradise Kumamoto," a food event hosted by Kumamoto Prefecture. To ensure that the popular dish from the event would not be a one-off product but would become the star of the Sakura Machi store, this renovation was decided.

In typical ramen, pork is often discussed as chashu (braised pork belly) or as a topping.

However, at Fuuki Seimen Kenkyujo Sakura Machi store, we have placed the pork itself at the center of the dish.

The star is the Kumamoto Prefecture brand pork, "Kumamoto Rindo Pork."

Rindo Pork is used in both the soup and the meat. Furthermore, by varying the noodles and eating methods for each dish, we have created a composition that allows customers to enjoy the sweetness, tenderness, and umami of Rindo Pork from different angles.

This is not just a new menu.

It is a new challenge to deliver Kumamoto's ingredients nationwide and overseas through a bowl of ramen.

Reason for choosing "shabu-shabu" instead of chashu: For this Rindo Pork Ramen, we offer Rindo Pork in a shabu-shabu style, rather than the usual chashu.

The reason for this is to allow customers to taste the natural sweetness of Rindo Pork in its purest form.

Instead of relying on the aroma of grilling, we lightly blanch the meat in hot soup for each order, bringing out the meat's tenderness, the elegant sweetness of the fat, and its moist texture.

Rindo Pork is a brand of pork that offers sweetness and umami even when eaten on its own. Therefore, Fuuki Seimen Kenkyujo has chosen the "shabu-shabu" style, which complements the soup and noodles without excessive seasoning.

Fuuki Seimen Kenkyujo is a ramen brand with roots in a long-established noodle maker in Kumamoto.

Starting in Kumamoto, it has expanded to five stores in Kumamoto, three in Tokyo, and one in Osaka. It has spread nationwide in less than five years and is now considering overseas expansion.

Among its offerings, the signature menu that has brought Fuuki Seimen Kenkyujo its fame is the Katsuokombu-sui Tsukezoba (dipping noodles in bonito and kelp broth).

This extremely popular menu item helped establish the Fuuki Seimen Kenkyujo name and contributed to the boom in kombu-sui tsukemen.

Now, Fuuki Seimen Kenkyujo, which has cultivated a "culture of savoring noodles," is embarking on a new challenge: creating a restaurant centered around Kumamoto's brand pork, "Kumamoto Rindo Pork."

The soup uses Rindo Pork bones and minced meat. While it is a clear, light broth, we aim for a flavor that combines the aroma of pork, the sweetness of the meat, and the richness of Kumamoto soy sauce.

For the topping, we use Rindo Pork belly slices for shabu-shabu instead of chashu. By lightly blanching them in hot soup for each order, we bring out the natural tenderness and the sweetness of the fat of Rindo Pork.

This dish, with its clear soup, noodles made from prefectural wheat, and shabu-shabu style Rindo Pork, offers a light yet profound umami.

3. Rindo Pork Abura Soba

A satisfying dish where you can savor Rindo Pork "as meat."

The noodles are finished to have a strong chewiness and an overwhelming presence, yet they firmly hold the flavors of the sauce, oil, and meat.

Each bowl uses three types of Rindo Pork: shabu-shabu, shredded meat, and soboro (ground meat).

The salty shabu-shabu, soy-sauce-flavored shredded meat, and sweet-and-savory soboro are layered, and as you mix them, the meat's umami spreads. This will be offered as a "meat-focused abura soba" that appeals to younger customers and encourages repeat visits.

Flat noodles made with prefectural wheat will be used.

For the noodles, we use Minaminokaori and Chikugoizumi from Kumamoto Prefecture.

Minaminokaori has a wheat-like aroma and presence.
