NoName100 is not a community that evaluates or ranks restaurants.

It is a community that, together with chefs, discovers restaurants worth preserving for the future—along with the people, culture, techniques, and craftsmanship behind them—and passes on their value to the future.

Beyond the dish, there are people.

There is culture.

There is craftsmanship.

And there is the unique moment that only this restaurant can create.

Our wish is simple:

"There is a restaurant I want to preserve for the future."

The world guided by chefs.

You can savor the cuisine.

But opportunities to understand why a single dish comes into being are rare.

The chef's passion.

The producer's dedication.

The artisan's skill.

The culture rooted in the land.

And the restaurant that the chef wishes to preserve for the future.

NoName100 Founders will journey through this world together with the chefs.

This is not a journey through cuisine.

It is a journey through restaurant culture.

Here lies the reason we want to preserve it for the future.

Here lies the reason we want to preserve it for the future.

The charm of cuisine cannot be expressed by a single dish alone.

Behind it lie chefs, producers, artisans, tableware, wine, and the culture of the land.

NoName100 is a community that encounters these "reasons" and connects Japan's restaurant culture to the future.

The Five Doors, opened only to Founders.

The Five Doors, opened only to Founders.

Becoming a Founder is not about receiving privileges.

It is about stepping deeply into the richness of Japan's restaurant culture alongside chefs.

Behind a single dish are not only chefs, but also producers, artisans, tableware, wine, and the culture of the land.

These cannot be seen by simply tasting the food.

That is why in NoName100, chefs act as guides, and together we journey through the world beyond the dish.

The Five Doors are gateways to a deeper understanding of Japan's restaurant culture.

Each encounter beyond these doors reveals the reasons we want to preserve for the future.

NoName100 Founders Gathering

The 100 selected Founders will be invited to the "NoName100 Founders Gathering," to be held on Monday, July 27, 2026, at Rizan Salon in Karuizawa Town, Nagano Prefecture.

Together with six renowned chefs from across Japan, participants will discuss Japan's restaurant culture under the theme "There is a restaurant I want to preserve for the future."

This is not a lecture.

It is the beginning of a new community, where chefs and Founders gather around the same table to talk about cuisine, culture, and the future.

It’s not just about listening.

It’s a day of dialogue, learning, and connection with the chefs.

Event Schedule

NoName100 Founders Gathering Common Program for Part 1 and Part 2

① Talk Session "There is a restaurant I want to preserve for the future."

The event opens with a talk session featuring six chefs from across Japan.

There is only one rule:

"No talking about your own restaurant."

Each chef will introduce a restaurant—other than their own—that they believe should be preserved for the future.

A restaurant they deeply respect as a chef.

The reasons they want to preserve it.

The culture and philosophy it embodies.

This special session, unique to NoName, allows Founders to share the stories behind each dish.

② Chef Round Table

After the talk session, participants will be divided into six tables, each joined by one chef.

Founders will gather in small groups around the chef to directly discuss cuisine, restaurant culture, and the values worth preserving for the future.

An honest dialogue you cannot experience at a lecture.

A special time to share stories behind the cuisine while learning about the chef’s values and worldview.

From here on, only chefs and Founders can experience this moment.

③ Founder Networking Party supported by Mottox

At the end of the event, a networking party will be held to deepen connections among Founders and with the chefs.

Wine selected by NoName Festival Official Wine Partner Mottox, and special dishes prepared by the participating chefs, will be served.

Cuisine and wine enhance each other’s charm.

Just as we seek to understand the emotions behind a dish, wine carries its own stories—of origin, of the winemaker.

The emotion poured into a single dish.

The story entrusted to a single bottle of wine.

Enjoy a free-flowing conversation among chefs, Founders, and food lovers, touching both.

There is a reason to preserve cuisine for the future.

There is a story to pass on through wine.

And there are people who share these emotions.

NoName Festival Official Wine Partner Mottox supports these encounters.
