1 Hotel Tokyo, a sustainable luxury hotel that opened in March 2026 (located in Akasaka, Minato-ku, Tokyo; General Manager: Masahito Konan), will begin serving its highly acclaimed weekend brunch with a summer-limited menu at NiNi, its all-day dining restaurant on the 38th floor, starting Saturday, July 25, 2026.

Located on the 38th floor with panoramic views of Tokyo, NiNi is a contemporary dining destination based on the concept of 'Two Coasts, Two Cultures.' It blends the open-air ambiance of the French Riviera with Japan’s seasonal sensibilities, refined craftsmanship, and the aesthetic of restrained beauty. Drawing inspiration from the free-spirited elegance of Nice, Cannes, and Saint-Tropez, NiNi reinterprets the bounties of the Mediterranean—such as Provençal herbs, olive oil, fresh seafood, and citrus—through Japanese sensibility and meticulous artisan techniques. The restaurant offers a unique dining experience where cuisine, music, and space harmonize.

The culinary direction is led by Head Chef Nico Polycarpio, who combines the rich food culture of Provence with Japan’s seasonal ingredients and artisanal skills, emphasizing the natural essence of each ingredient. Respecting the rhythms of nature and presenting seasonal produce in its most suitable form lies at the heart of NiNi’s culinary philosophy.

This summer, Head Chef Nico Polycarpio introduces new seasonal dishes. Highlights include house-made saffron cavatelli with char-grilled sweet corn, Comté cheese, and Parmigiano, capturing the juicy sweetness of summer corn, and roasted 'Miyabi tai' (Japanese seabream) with vinaigrette sauce, tomatoes, black olives, herbs, and myoga, where the refreshing aroma of myoga enhances the delicate flavor of sustainably farmed fish. The entire menu celebrates the light, vibrant flavors of summer.

Additionally, four special courses are offered to evoke the gourmet culture of summer Europe, featuring caviar from Caviar House, which holds the FOS (Friends of the Sea) certification, paired with Champagne. In addition to the standard brunch, guests can choose from: 'Weekend Brunch with Caviar' (adding Caviar House caviar to the seafood platter), and two options of 'Weekend Brunch with Caviar & Champagne Free Flow' (120 minutes), offering a luxurious upgrade.
