Ajinomoto's "SIIDA®︎" Dashi Brand to Open Limited-Time Restaurant in Collaboration with Gakugei-daigaku's Renowned "Kudan" at the 10th Anniversary "CRAFT SAKE WEEK 2026"!

Ajinomoto Co., Ltd. (President: Shigeo Nakamura, Headquarters: Chuo-ku, Tokyo) will launch its "SIIDA®︎" brand, which offers new food experiences with dashi, at the "CRAFT SAKE WEEK 2026 with OMAKASE byGMO at ROPPONGI HILLS" (hereinafter, "CRAFT SAKE WEEK 2026"), a festival of Japanese food culture held at Roppongi Hills Arena from Tuesday, April 21 to Saturday, April 25, 2026. They will open a limited-time restaurant in collaboration with "Kudan," a renowned sake izakaya in Gakugei-daigaku, Tokyo, and also set up a sales booth where visitors can experience aroma comparisons of "SIIDA®︎" and purchase products.

### Opening a Limited-Time "SIIDA®︎" Restaurant at CRAFT SAKE WEEK 2026

Ajinomoto Co., Ltd. launched the dashi brand "SIIDA®︎" in November 2024, offering three distinct flavors of dashi that vary based on the production and smoking methods of bonito flakes, with the desire to expand the possibilities of "dashi," which forms the foundation of Japanese food culture. Sympathizing with the spirit of "CRAFT SAKE WEEK 2026" to "rediscover Japanese culture and connect it to the future," they decided to open a restaurant and a sales booth this time.

At the restaurant, in collaboration with "Kudan," known as a famous izakaya for homemade oden and sake in Gakugei-daigaku, Tokyo, they will offer a special menu exclusive to this event for five days from Tuesday, April 21 to Saturday, April 25. This menu will make full use of SIIDA®︎'s three unique dashi varieties—〈HUN〉, 〈KUN〉, and 〈KOU〉—as well as the leftover dashi ingredients.

Furthermore, a sales booth will be set up where visitors can actually pick up and purchase "SIIDA®︎" dashi packs, which are usually sold exclusively online. At the venue, an experience corner will be available where visitors can compare the unique "aromas" of the three types of dashi. Through all five senses, visitors can enjoy the world of "SIIDA®︎," which adds depth to everyday cooking.
