Salt Milk Melon Parfait

Chourakukan Hotel (604 Maruyamacho, Higashiyama Ward, Kyoto City; General Manager: Shigeto Yoshida) will serve a 'Salt Milk Melon Parfait' at Dessert Cafe Chourakukan from Wednesday, July 1, 2026, to Friday, July 31, 2026, weekdays only and by reservation.

Chourakukan, a nationally designated Important Cultural Property, was originally built in 1909 (Meiji 42) as a guest reception hall.

We have prepared a limited summer parfait perfect for an afternoon spent in this historic Western-style building.

Salt Milk Melon Parfait

The top of the glass features generous portions of fresh melon. Layers of rich milk ice cream, light chantilly cream, and aromatic crumble are carefully assembled to harmonize the fruit's sweetness, the creaminess of milk, and varied textures.

Adding a distinctive accent to the flavor is Maldon sea salt from the UK. As salt crystals touch the tongue while eating, the melon's sweetness and milk's richness are enhanced, offering a different taste experience with every bite.

Hidden in the middle layer is pineapple sorbet with a refreshing tang, followed by white wine jelly and melon marinated with elderflower and dill.

The cool aroma and light acidity refresh the palate, leaving a crisp, clean aftertaste.

This parfait features layered flavors of fruit sweetness, saltiness, milk richness, and herbal and white wine aromas, evolving with each bite for a dynamic tasting journey.
