Kabou Melon to Roman (Kagurazaka, Tokyo), the first melon-dedicated workshop and satellite shop of Tsugaru City, Aomori Prefecture (Mayor: Hiroaki Kuramitsu; hereafter 'Tsugaru City'), will begin serving its summer menu starting Wednesday, July 15, 2026.
The highlight of the summer menu is the 'Whole Melon Luxury Parfait,' a lavish reinterpretation of the shop’s popular half-melon parfait. This year’s version layers frozen melon sorbet and melon cheese cream with melon mini-canelés, a bite-sized tart with salchichón salami, and a garden herb salad dressed with melon vinaigrette, creating a harmonious blend of sweet, sour, and savory flavors.
[New Item] Whole Melon Luxury Parfait
● Whole Melon Luxury Parfait (¥3,600)
At the center of a boldly cut half-melon, we combine frozen melon sorbet and melon cheese cream. Topped elegantly with melon mini-canelés, house-made lemon whipped cream, a salchichón salami tartlet, and a garden herb salad with melon dressing, this is a luxurious, limited-time summer parfait that unfolds layers of sweetness, acidity, and saltiness.
Featuring Premium Tsugaru City Melons with a Brix Level of 17 or Higher
For the summer half-melon parfait, we will use premium melons from Tsugaru City during their peak harvest season, available for a limited time only.
These premium melons are selected using optical sensors to ensure a Brix level of 17 or higher, and are shipped by JA Goshotsugaru. Representing only a few percent of the total harvest and available for a limited period, these melons offer a uniquely fresh, farm-to-table flavor experience.

On July 7, 2019, Tsugaru City, Aomori Prefecture (Mayor: Hiroaki Kuramitsu), opened a specialty satellite shop in Kagurazaka, Tokyo, dedicated exclusively to one of its signature products—'melon'.
'Kabou Melon to Roman' was born from the 'romance' of wanting to make melons a more beloved fruit. As the fourth-largest melon-producing municipality in Japan (based on estimated agricultural output by municipality, 2023, Ministry of Agriculture, Forestry and Fisheries), the shop operates as Tsugaru City’s satellite location with the goal of increasing awareness of the city through its melons.
We offer original menus made with seasonal melons sourced from across Japan, available at our café and for takeout. The shop, symbolized by custom melon-colored tiles, is a space where visitors can experience melons with all five senses—taste, smell, sight, sound, and touch—making it easy and enjoyable to appreciate and deeply understand melons.
