Matsu's traditional snacks, 'Mini-gao' and 'Gui-tao'—the former once common in households and the latter essential for celebrations—are gradually disappearing from tables due to changing times. The Tieban Community Development Association held a workshop today to pass on these culinary memories. Instructor Hsiao Hsiu-yun explained that 'Gui-tao' is made with a dough of sweet potato and starch, filled with sweet rice, red beans, or shredded radish, then pressed into a mold and steamed. 'Mini-gao' is made with starch, sugar, water, and preserved fruit, showcasing the wisdom of ancestors in times of scarcity. Participants learned the recipes to ensure these traditions are passed down to the next generation.
