Popular Sushi Izakaya 'Sugidama' Introduces Rare Bluefin Tuna 'Kamatoro'—Only 3% per Fish! Plus, New Fruit Sours Using Domestic Japanese Fruits.

With the intention of providing a luxurious dining experience for families and friends gathering during Golden Week, sushi using 'Kamatoro,' a rare part of Bluefin tuna, will be introduced. Kamatoro is a rare cut that makes up only about 3% of a single fish, characterized by its marbled texture that melts in the mouth and the rich umami of its fat. 'Bluefin Tuna Kamatoro Nigiri with Andean Red Salt' allows guests to enjoy the natural flavor of the ingredient, with the Andean red salt bringing out the sweetness of the fat. 'Exquisite Wrap with Bluefin Tuna Kamatoro and Condiments' features Kamatoro chopped in-store mixed with raw soy sauce, combined with aromatic perilla leaves, crunchy takuan (pickled radish), and white scallions for a refreshing taste.

Furthermore, on the same day, fruit sours using domestic Japanese fruits will also debut. Three varieties will be available: 'Miyazaki Hyuganatsu Sour' with a balanced acidity and gentle sweetness; 'Fukuoka Amaou Strawberry Sour' with an exquisite balance of rich sweetness and tartness; and 'Hokkaido Yoichi Grape Sour' offering a floral aroma and mellow flavor.
