Kayu-san-chin's congee inherits the philosophy of 'food as medicine' from Xie Peng Dian, an authentic Chinese restaurant established in 1967. These are authentic Chinese congees designed to 'energize the body from within'. In Chinese tradition, warming the body through food is believed to support health. Every morning, a hot, homemade soup — made with dried scallops (whose umami deepens through drying), Japanese kelp, and chicken broth — is used to slowly cook fresh rice with ginger, creating a nutritious, flavorful congee that gently warms the body from the inside.
