(Nagano City, Nagano Prefecture, Representative Director Soichiro Tokuan), will hold the "Summer Noodle Fair" starting Friday, July 10, 2026, at the day-use hot spring Kotori no Yu (Matsushiro-machi, Nagano City, Nagano Prefecture).

We have prepared three types of cold noodle dishes that can be enjoyed refreshingly, even during the summer when appetite tends to decrease due to the heat.

These are limited-time menus for this summer, each offering a different flavor.

Three Cold Noodles to Color Your Summer

Onsen Tamago Mentai Tororo Udon ~With a Large Shrimp Kakiage~

Price: 1,200 yen (tax included) A perfect summer dish combining cold udon with mentaiko, onsen tamago (hot spring egg), and tororo (grated yam). Enjoy it with a dashi broth made from kelp and bonito. The generous use of Matsushiro-grown nagaimo yam tororo allows you to enjoy its smooth texture until the last bite. It's also very filling with the large shrimp kakiage.

Kotori's Salt Lemon Ramen ~Refreshingly Tangy with Special Lemon Vinegar~

Price: 1,200 yen (tax included) A refreshing salt ramen combining fresh lemon and grilled chicken with an original soup made from four types of herbs and chicken bone broth. It comes with a special lemon vinegar, which uses maple syrup as a secret ingredient, allowing you to enjoy a change in flavor by adding it to your preference.

Spicy Soy Milk Tantanmen ~Served with a Sinful Bite of Rice~

Price: 1,400 yen (tax included) A chilled tantanmen finished with a mellow spiciness using plenty of soy milk. The meat sauce made with Shinshu miso and sweet bean paste enhances the umami.

By adding the accompanying rice to the soup at the end, you can enjoy this dish until the very last bite. You can also adjust the spiciness by adding doubanjiang (chili bean paste) to your liking.

Kotori no Yu was renovated and reopened in Matsushiro-machi, Nagano City, in November 2017.

Located in a quiet natural setting at the foot of Mt. Minakami, it offers panoramic views of Zenkoji Plain from within the facility.

The hot spring facilities include a panoramic bath with scenic views, a garden open-air bath where you can feel the changing seasons, and an indoor bath, for a total of three types of baths. You can relax and heal your mind and body while soaking in the hot springs.

The facility also features a relaxation space with approximately 10,000 books and comics, providing a comfortable space for all ages.

Additionally, the adjacent cafe restaurant offers seasonal menus, dishes using Shinshu ingredients, and gelato.
