Garrya Nijo Castle Kyoto, a hotel under the global hospitality group Banyan Group (Location: Nakagyo-ku, Kyoto; General Manager: Tomoaki Yamada), will begin offering a new French-inspired cuisine course focusing on 'umami' at its main dining restaurant, Singular, starting July 1, 2026.

The course menus feature locally sourced products from around Kyoto, such as seafood from Maizuru, Omi duck, and local vegetables. Each dish focuses on the simple essence of these ingredients, presented in a beautiful, modern Kaiseki-style.

The lunch course, 'Umami Kyoto Bouillabaisse', consists of 7 dishes centered around a bouillabaisse made with Maizuru seafood. The dinner course, 'Calendrier', offers 10 innovative dishes featuring seasonal ayu (sweetfish), abalone, and Omi duck.
