While available in chilled and frozen markets, "dried noodles" that can be stored at room temperature for extended periods have extremely high manufacturing hurdles due to wrinkles and breakage caused by variations in noodle thickness, creating a market void. We have recreated the unique texture of "knife-shaved noodles," which originated in China's Shanxi Province and have been popular in Japan since the 1990s, with a chewy center and thin, slippery edges, in a dried noodle format.

We used a special cutting blade to replicate the characteristic shape and texture of knife-shaved noodles in dried form, and after overcoming various manufacturing challenges for about two years, we have brought this product to market.

As for how to eat it, you can enjoy various arrangements such as adding it as an ingredient to Mala Tang, mixing it with your favorite sauces, or using it instead of regular pasta. Personally, I recommend eating it as Mapo Noodles topped with spicy Mapo Tofu, or as a mixed noodle dish tossed with commercially available Dan Dan sauce.

Upon tasting the finished product, I felt that authentic flavors could be reproduced at home.

In Japan, knife-shaved noodles are often served in soup, but in their place of origin, stir-frying them and coating them with sauce is the mainstream method. This noodle retains its unique texture firmly even when stir-fried or simmered, and its compatibility with sauces is outstanding. With its smooth mouthfeel and satisfying texture that doesn't get lost among the ingredients, it perfectly accommodates any authentic arrangement.

Profile of Head Chef Kazutoyo Inoue

Born in Akita Prefecture in 1981. After graduating from a culinary school in Iwate Prefecture, he joined Sichuan Restaurant in 2001. He was part of the opening staff in the kitchen of the affiliated restaurant "Sichuan Restaurant Chen" Shibuya store, which opened the same year. After serving as副料理長 (assistant head chef), he became head chef in 2017. He has won numerous awards since receiving a bronze medal in the "Dessert Division" at the 4th Young Chef Competition in 2003. In 2016, he won the Grand Prix "Red Egg" at RED U-35 (RYORININ’s EMERGING DREAM), Japan's largest culinary competition that discovers emerging young talent.
