Luxurious Red Melon Shaved Ice

Risonare Tomamu, based on the concept of a 'graceful stay feeling the land of Hokkaido,' will once again offer its 'Luxurious Red Melon Shaved Ice' featuring dairy products from Farm Hoshino (*1) from June 1 to August 31, 2026. This popular annual treat uses an entire red-fleshed melon, which is in season during the summer. This summer, we are also introducing two new original drinks that allow guests to enjoy the distinct flavors of both green and red melons. Guests can spend an elegant summer night in Hokkaido at our outdoor lounge, warmed by a bonfire, while savoring the rich sweetness and aroma of the melons.

Background

Farm Hoshino produces a variety of dairy products from the milk of cows raised in Tomamu. The 'Luxurious Red Melon Shaved Ice' incorporates Farm Hoshino's milk soft serve and ricotta, as well as whey, a byproduct of the cheese-making process. It is said that melons become sweeter with greater temperature differences between day and night (*2), and Hokkaido melons grown in this climate are characterized by their rich aroma and intense sweetness. We decided to offer this shaved ice to allow guests to enjoy the unique local flavors created by the combination of Farm Hoshino's dairy and seasonal red melon.

Farm Hoshino milk soft serve is hidden inside

This shaved ice uses an entire red melon as a bowl, topped with shaved frozen melon flesh. Inside the ice, we place Farm Hoshino's milk soft serve, finished with a ricotta and whey espuma. It is a unique dish where the natural sweetness of the melon harmonizes with the richness and refreshing acidity of the dairy. Furthermore, pouring champagne over it enhances the flavor, making it an enjoyable 'adult float.'
