After being landed, the scallops are transported live to the store using a special delivery truck equipped with a giant water tank, ensuring unparalleled freshness. You can enjoy the firm elasticity of the scallop adductor muscles and their gentle sweetness that fills your mouth.
The direct sale event using a live fish truck, held exclusively at the Kakujoe Fish Soka Store on June 27 (Sat) and 28 (Sun), was a huge success with many customers lining up before opening. On the first day, over 640 kg of live scallops, significantly exceeding the planned amount, were sold and sold out by early afternoon, demonstrating immense popularity. The following day, they sold out before noon, with a total of over 1 ton sold over the two days! The popularity far exceeded expectations.
At the Sayama Store on July 11 (Sat) and 12 (Sun), a giant 12-ton live fish truck will make a grand appearance in the store's parking lot! Furthermore, you can savor freshly grilled scallops from Kakujoe Fish's food truck!
This spectacular setting, reminiscent of a bustling market or aquarium, offers a special two-day experience where the whole family, including young children who love vehicles, can enjoy shopping with excitement.

Over 1 ton sold! The highly successful "Live Fish Truck" event at Kakujoe Fish Soka Store
The event at Kakujoe Fish Soka Store on June 27-28 was a great success, undeterred by the typhoon!
Due to the simultaneous approach of typhoons No. 7 and 8, the event was almost canceled. However, on the day, despite intermittent light rain, many customers flocked to the store from early morning. The first person in line arrived at 6:30 AM!
Sales started just before 9:00 AM, but the line never ceased, creating a lively atmosphere around the live fish truck. Many customers bought 20 or 30 scallops at a time, with some purchasing as many as 50! They mentioned they were for friends and relatives.
Next to the live scallop sales tent, freshly grilled scallops were prepared at the Kakujoe Fish food truck. The aroma of grilling scallops filled the air, stimulating appetites. Many customers who initially only intended to buy live scallops ended up making purchases.
Along with the great success, the prepared live scallops were depleted at more than twice the expected speed. On the first day, sales ended at 1:00 PM after selling over 600 kg, and on the second day, they sold out by just past 11:00 AM! A total of 1060 kg was sold over the two days, an astonishing sales volume.
We are grateful for the opportunity to convey the charm of Hokkaido's sea to so many customers, despite the typhoon!

The live fish truck is approximately 12 tons, 12 meters long, and 4 meters high, equipped with a high-performance water tank featuring four layers. After loading live scallops at the port, they travel by ferry from Hakodate to Aomori Port in Aomori Prefecture. From there, they travel all the way to the Kanto region via the Tohoku Expressway. Although it's a long journey from loading to store arrival, the live fish truck's water tank is equipped with cooling functions, ensuring the live scallops are delivered to customers with exceptional freshness.
Scallops, grown in Hokkaido's cold sea, are thick and sweet. After landing, they are immediately washed to remove barnacles and other attachments. They are then transported to the live fish truck and placed in the water tank while still alive.

However, opening the shells of live scallops with your family can be a fun experience. It might be easier than you think.
We learned how to open shells from Mr. Yoshioka, a "Kindness Staff" member at Kakujoe Fish Soka Store!
First, wash the shells thoroughly with a brush or scrubber.
Scallop shells, grown in Hokkaido's nutrient-rich sea, tend to have seaweed and barnacles attached.
Although they are washed after landing, wash them again with fresh water before cooking to remove any dirt.
Insert a shell-opening spatula into the gap between the shell edges.
★ A Western-style knife can also be used instead of a spatula.
★ Wear gloves or use a towel on your left hand for safety to avoid injury.
With the spatula inserted, press it firmly against the flat shell (top shell) and move the spatula back and forth in small motions to advance it, separating the adductor muscle from the shell.
★ The flat side is the top shell, and the bulging side is the bottom shell of the scallop.
Once the adductor muscle is separated, the top shell can be easily opened by hand.

Once opened, you can grill them directly on a BBQ or steam them in a steamer. Heating them enhances their flavor and sweetness.
When slicing the thick adductor muscles for sashimi, cutting them vertically like a cake preserves the fibers, allowing you to enjoy the scallop's natural firm texture and chewiness. Cutting them horizontally across the fibers results in a smoother, melt-in-your-mouth texture and a stronger sense of sweetness.
Why not try experiencing the difference in taste by preparing live scallops in both ways?
For the adductor muscle (shell rim), after salting and rinsing, cook them by pan-frying with butter or boiling. You can enjoy the unique crisp texture and umami of the adductor muscle.
The gonads (white: male / red or orange: female) must be cooked before eating. They offer a rich umami flavor when pan-fried with butter or simmered.
Scallop rice cooked with the adductor muscles and gonads is also recommended.
Enjoy live scallops easily at home!
It's okay if you can't BBQ outdoors! You can also grill them in their shells using your home grill or oven.
Wrap the shell part with aluminum foil and grill or bake it in the oven. The foil will catch any delicious soup that might spill out, preventing burning or mess.
(If you are concerned about the surface browning, you can loosely cover the top with another sheet of foil.)

Grilling time varies depending on the heat, but it takes about 7-8 minutes over medium to medium-high heat, checking for doneness.
For sashimi, take advantage of the large, thick adductor muscles and try both vertical and horizontal slicing!
