Hakone, one of Japan's premier tourist destinations, has long struggled with a lack of nighttime dining options, as many restaurants close in the evening. According to a survey by Hakone DMO (Hakone Town Tourism Association), the percentage of respondents who cited 'few nighttime operating stores' as a negative aspect of Hakone increased from 15.1% in 2018 to 19.4% in 2022, indicating a worsening issue that is seriously affecting tourists.
The plan aims to reduce this dissatisfaction to 'less than 10%' by fiscal 2027 as a business KPI. To directly contribute to this issue, 'Kinnobamboo Shou,' which opened on June 5, 2026, operates until 22:00 at night. Since its opening, it has received numerous positive responses from guests staying overnight and travelers who want to enjoy Hakone until late at night, saying, 'We wanted a place like this,' and has taken a significant step toward achieving the goal.

Summer-limited 'Summer Vegetable Cold Odeng'

This cold odeng features summer vegetables such as okura, tomatoes, eggplant, shiso, and cucumber, which are at their best in the summer. The vegetables are marinated in carefully prepared 'Kinnobamboo Dashi' and quickly chilled to bring out the natural juiciness of the vegetables and the refined umami of the dashi.

Summer-limited 'Cold Dashi Tea'

This is a summer-limited, cold version of the 'dashi tea' served during lunchtime, which uses ingredients such as Jiroume and shirasu, grilled mentaiko, and tai. The carefully prepared cold dashi allows you to enjoy a light and refreshing meal even during the hot summer months when your appetite may decrease due to the heat of tourism.
Choose from three types: Tai dashi tea, Odawara Jiroume and shirasu dashi tea, and grilled mentaiko dashi tea
