The sweet and savory barbecue-style flavor pairs perfectly with the soft, moist bun, creating a satisfying bite-sized treat. Despite its compact size, it delivers the full, rich taste of pulled pork. It's perfect not only as a light meal or snack, but also as an extra item in bento boxes, or as a gift or offering.

〈What is Pulled Pork?〉
Pulled pork originated in the southern United States and involves slowly cooking pork over a long period until it becomes tender enough to be easily shredded by hand. This slow cooking process breaks down the muscle fibers, resulting in a melt-in-your-mouth texture and moist mouthfeel. The concentrated umami flavor of the pork gives it a deep, rich taste, making it a beloved barbecue dish in its home region. It is enjoyed both on its own and sandwiched in bread, in a variety of styles.
Maisen's Commitment to Quality
Pork: Only premium pork sourced globally and rigorously inspected daily is used. The sinew is carefully removed and the meat is gently pounded to loosen the fibers. This labor-intensive process cannot be compromised, as even a single missed cut can distort the meat's shape when fried and affect the eating experience.
Breadcrumbs and Frying Oil: Fresh breadcrumbs are made daily from bread baked according to a proprietary recipe. These breadcrumbs are unique to Maisen in composition, size, and shape, differing significantly from commercial varieties. The frying oil is also a custom-made product exclusive to Maisen. By carefully controlling frying time, the cutlets achieve a crisp, glossy exterior with a light, flower-like expansion of the coating—what Maisen calls 'ken-tachi' (sword-standing), a hallmark of their tonkatsu.
Sauce: Maisen currently produces four types of sauce: mild, spicy, sandwich-style, and black pork-specific.
The base recipes remain unchanged since the company's founding. Using fresh vegetables and fruits, skilled artisans who have inherited the founder's philosophy carefully blend and taste each batch to ensure consistent quality.
